Some of you will be grossed out by this, but a friend made a similar batch of chocolate chunk cookies, one using chicharon pork cracklings, and another with crispy chicken skin, and they were delicious. The salty and sweet go together well.

I just can't imagine it, bacon has a distinctive smoky flavor if it's good bacon, not that I'm any kind of avid meat eater, I'm not. But I just can't comprehend a flavor like bacon being put into a chocolate chip cookie. I mean, you might as well use lard as the shortening for the cookie dough, am I right? Bacon and lard come from the same animal. Someone please explain or elaborate on this seemingly trendy fascination for "bacon in everything" lately.

R30 it has to do with tongue receptors and cognition. Certain receptors stimulate certain parts of cortex. You remember the pleasant taste and the experience . That's why sometimes you crave CERTAIN unhealthy foods. But brain doesn't know these foods lack of nutrients. Healthier foods give you a full stomach but the stimuli is weaker.

Bacon fat is really good to cook with. I also use chicken fat, too. I’ll mix either with safflower oil or butter, depending.
Anything with beans is elevated by using a little bacon fat. Potatoes can benefit from either, too.
My other secret ingredients are nutritional yeast and anchovy paste.
But not in baking.
