I remember after the second or third season, they did a Behind The Scenes documentary on the show. In the early days, Chris Kimball was a dick and seemed like he had some sort of personality disorder, verified when Julia said that it was hard always having to work with him.
Everyone else on on the show was very careful what they said about him, but after that, he stopped being so...dick-y.
Julia was cute in the early days but then she married, whelped, and grew into a Mrs. Bridges-to-be.
Brigit really likes working with meat. Really, really...
The round guy who does the kitchen gadgets is my favorite, followed by earnest Becky, then Julia and Brigit, then the skinny taste test guy. I remember in an early seaon, Chris flew down to NYC to do a segment on the Today show, but the schedule got messed up and he looked like he was going to maul Matt, but mostly he snarled.

It is my fave cooking show mainly because I have never once heard anyone on the show say they put a lot of "love" into their food. That is the single tiredest cliche on the Food Network. Everyone including Alton has said it numerous times on their shows.

I love this show too. It's very scientific. They recently did a spaghetti and meatballs recipe but man, it seemed pretty complicated. They recommend soaking Panko in buttermilk and adding gelatin instead of veal. Anyone try it?

America's Test Kitchen runs part of the year, and their spin-off show, Cook's Country, runs the other part of the year. In most PBS markets they share the same time slot. But ATK is still their flagship show, and yes, it's still being made. They have already started filming for their next season, which I believe begins in September.

I get a "Jeff Smith" vibe off of Christopher Kimball - if he didn't mention wife/kids, I'd swear he was gay.
I always sense tension when Chris Kimball and Bridget do segments together. They seem to goad each other in a borderline nasty way. Chris sometimes says things that are bitchy and you can see Bridget wanting to ream him but she reigns it in and stays professional.
He's so much nicer to Julia and those two younger brunettes. He's reaallly nice to that young pretty brunette.

I love/hate the taste test segments that CK does with that guy Jack. Their teasing banter got tired 3 years ago. Jack always implies that CK's guesses are 'wrong' when they don't agree with the audience. Then CK gets touchy and gets the bitch face on.
Also, that guy Jack is uber fey. Imagine my surprise when he mentioned that he has kids (don't remember if he ever alludes to a wife, though).

I enjoy them all when they're away from Kimball, who is a controlling, pushy, off-putting snark. On NPR and other venues Adam, Julia, Jack and Bridget are all fun, smart and informative.
It's Kimball's show and his "vision" is tired. And so is his schtick.
Also, the crap driving easier-faster-lazier is not the same as the original idea behind the "test kitchen." Serving lazy home cooks isn't the same as serving people who seriously want to know the best versions of conventional and trendy dishes, and the reasons they are the best.

Anyone tried this technique for cakes using slices of summer fruit, especially peaches?
I agree with them that these cakes often come out soggy or even clay-like because of all the moisture in the fruit.
Peach Cake Run Amuck:

Anyone remember the Great Chefs shows from way back? They would travel to Europe a lot and just show chefs cooking some classic dishes. No goofy stories, no witty repartee, no histrionics - just cooking. That was a great show.

Bridget is my favorite of the cooks, but Chris makes some nasty aggressive remarks when they're on together. Once in a while she zings him back. I've noticed he praises all of Julia's recipes, constantly saying that's the best whatever he has ever tasted and he never says that to Bridget. He'll tell Bridget something is good, but he doesn't praise her to the heavens like he does Julia. He often tells Julia something she has made is in the top five recipes ever.
I've also noticed he is especially nice to the younger of the two newer cooks. She was very nervous at first and I wondered if he was trying to help, but I don't know that's in his nature.
I don't think it's true that each of Americas Test Kitchen and Cooks Country covers half a season as R21 said. Our PBS station shows them back to back every week for the entire season.
I remember when Julia was young and much thinner. She got married and had kids and she gained weight. She says she's German, and she's built like a lot of German women I've known.
Bridget has become more involved in the radio show and some other parts of the business. I was concerned she was on her way out when I noticed we were seeing less of her, but I checked and she seems to have been promoted.

It's so funny to hear everyone getting annoyed with Chris. He's a neighbor of mine, and a really genuine, easygoing fellow. He's conscious of the rather uptight image he protects, and attributes it to being a taciturn Vermonter. That's why his on-air "talent" is bubbly and outgoing, to give viewers something warm and likable to latch onto. But he's a terrific guy who built a rather amazing business.

My husband turned me on to this show. It is fascinating. They were measuring tortilla thickness with a goddamn caliper for god's sake, it was great.
Chris Kimball used to be morbidly obese. I think that's why he has that voluminous waddle. He comes off as passive-aggressive and a snide, almost Asperger-y. We call him the old maid in britches (TM Margaret Mitchell). We love Brigit because she's the only one who gives it back to him.
Beware of subscribing to the magazine or joining their website. CC and ATK are the kind of outfits that will automatically sign you up for a book club and other subscriptions (charging your credit card), and they make opting out difficult. We were also charged for a magazine subscription twice and received two copies of each mag for a year despite trying to cancel. My husband let it slide because they're PBS and non-commercial, but it was still a little sleazy.

I love the show and has made some of the recipes which all came out great. Chris does seems uptight and comes across like a jerk but he isn't as irritating as those idiots on the Food Network. Julia is by far my favorite to watch. For some reason I can't stand Bridget and I change the channel when her segment comes on. I've always got the impression that Chris favors Bridget over Julia.

The best PBS show is that Scandinavian cooking one. I like that Norweigian guy named Andreas. he seems to have an unexpected like of camp. There was an episode where he dressed in a *very* gay old sailor suit on tall ship "manned" by *very* butch Nordic women. it was like a Ken Russel film come to life.
The danish guy on the Copenhagen segments on that show is the one who runs that acclaimed Noma place I think. He's kinda sexy but oh. so. LOUD.

Back before the dawn of recorded history, David Rosengarten had a show on the Food Channel entitled "Taste." He took a single dish, e.g. seviche or roast lamb or chocolate chip cookies, deconstructed it, and then showed how to do it the definitive way to maximize flavor. I wonder if a certain tall, thrice-married Vermonter saw those early shows, and thought it'd be a good idea to take it a few steps further? Not that I'm not a fan of ATK, but just a little curious.

I got the ATK cookbook as a Christmas gift. I've made at least a half dozen things following these recipes. And they were all keepers. Well, maybe one was a little weak. It's because these recipes were TESTED, unlike the ones you find on the Food Network website.

From the ATK recipe book, I've tried the Filipino Chicken Adobo, Skillet Chicken and Broccoli with Ziti, the Eggs Benedict, and the Home Fries. Also I've made the Ragu Alla Bolognese with homemade pasta. The homemade pasta was something I've always been afraid to try my hand at, but it turned out great and it was fairly easy (though time consuming). All of these recipes were keepers. That's really the best track record I've ever had for a cookbook thus far.

In spite of Kimball's irritating personality I love both ATK and CC. They are by far the most informative cooking shows on TV and recipes I've tried from the shows or the cookbooks, although sometimes time-consuming, always turn out well--their testing pays off for us who enjoy cooking and eating.
Privileged he may be, but Kimball has been hugely successful and made pots of money on these enterprises. But you get very little without paying for it--and to agree with R53, they are way too aggressive in marketing and unresponsive if you don't buy in. E.g. simply because I subscribe to CI and ordered one cookbook, they sent me another unsolicited, and even had the gall to think I would pay the return postage when I didn't want it! (ultimately I didn't, though the whole exercise was a royal pain). They don't want to speak with you; they do want more of your money, and customer "service" is a joke.
It's pretty clear that all the personalities on the programs work in fear of Kimball. Despite his feeble attempts at camaraderie and modesty, he is a controlling taskmaster (those asinine food costumes--"look at me!!") only underscoring the hugeness and fragility of his ego. And despite his summering there as a kid and now owning land there, he is NOT originally a Vermonter--he's from Westchester County, NY--but that doesn't fit the image he pushes.

Also, could never figure out why he always makes himself out to be such a bad cook. "Buy my magazine, I'm a terrible cook but I know people who aren't" How is this a selling point?

Just got Cooking For Two The Year's Best Recipes Cut Down to Size by The Editors at America's Test Kitchen.
Very nice cookbook, has a lot of great recipes cut down for 2 people. Yeah, yeah I know, it's not difficult to halve a recipe, but I like the idea of it already scaled down to a perfect sized meal for myself and my partner. This is the first cookbook I've bought for my Kindle and I like how easy it is to browse and select a recipe. A little on the expensive side for a cookbook ($20 for the Kindle version) but not surprising. Still, it was worth it.

Chris Kimball is a greedy bastard who has threatened to sue bloggers for posting ATK recipes that they tried and had comments on.
I too subscribed to their website only to be automatically rebilled without notice. Despite calls to refund my money, which they promised to do, I never got it back.
I quit watching the show after they fucked me over and even if they hadn't done it, I was sick of the shitty way he treated his staff.
He wrote an op-ed where he shat all over the world of food bloggers and wrote, "The world needs fewer opinions and more thoughtful expertise — the kind that comes from real experience, the hard-won blood-on-the-floor kind."
Martha Stewart has the same condescending attitude toward young bloggers, even the successful ones, and it's not because she, or Chris care about teaching. It's about people not buying their content because they can get great recipes online for free.

Jesus. I can state for a fact that the graham cracker crust in the first "Best Recipe" Key lime pie recipe doesn't work. It produced powdery crumbs that didn't hold together. I wonder how something so simple escaped them.
