I also find risotto terribly overrated.

That being said, apparently it's very hard to find good risotto as it requires constant stirring, and few restaurants have the capacity nor demand to have a dedicated risotto chef. So most people just get sludge and seem to be happy with it.

Some restaurants make it individually in pressure cookers. For a time there was a restaurant in NYC called Risotteria that served all varieties with “add-ins” like chicken, asparagus. It was good.

I used to eat a home version made form a kit, Knorr, when I was young and had my first apartment and kitchen. I could assemble it pretty quickly using chicken stock and onions, rough chopped, and a fistful or Parmesan.

Watching carbs at this stage of life, I miss the good old days.

It's tasty, I don't mind how its look, but the texture is disgusting for me. No slimy rice please.
