There was a long thread on Reddit on this subject, and the consensus among the servers was that customers stacking dishes is appreciated IF and ONLY if it's done correctly. If done incorrectly, it causes them more work. So most people probably shouldn't.

Bad tipping, rudeness. If it's busy, ordering something cheap, asking for multiple refills, staying for too long and not vacating your table (unless you're a good tipper & polite).
