I see references to critical thinking a lot and I get the gist of what it is but I don't recall ever having a course in it in K-12 or in college. Yet people talk about how it needs to be taught more.

It really is something and I actually teach courses on critical thinking to corporations.
In a nutshell, critical thinking is "thinking about thinking," or metacognition. It's a process and a skill that's developed. It also involves recognizing preconceived notions and biases and learning to put them aside when they interfere with the decision making process.

I had the course in high school. It taught us to recognize agendaed horseshit, manipulative horseshit and deflective/irrelevant horseshit. It was the first place I'd heard that if you can't discuss an issue from all sides, you're ignorant of the issue.
