A couple of friends and a relative died recently and left social media accounts up. One is maintained as a memorial by family, while the others are simply abandoned. I have kept them added to honor their memory, but at what point is it best to remove a deceased relative/friend’s page from your social media?

They should be removed immediately after the funeral.

With FB you can unfollow, so that you show as a friend but otherwise do not see new posts that the family might make.
Otherwise, I would say just remove the connection. And if the person died and has no one monitoring the account, you should let the social media platform know.

Generally, three weeks before they take their last breath is acceptable. No reason for you to be there at their last actual breath.
