I've been eating a lot of potatoes lately. Baked, mashed, and fried with garlic. So probably potatoes veggie burgers and a salad with avocado in it.

Hotdogs - oven heated for that gas station glitz - and “California Hot vegetables” from the jar because I’ve wanted pickled cauliflower.
Later, oven baked sweet potato fries, but I really want coffee with that and it may have to wait for breakfast.

I was thinking of making a big old bowl of Maine chowder. Boil diced potatoes in a little lightly salted water, when tender add cream or half-and-half, onions cooked until translucent, and the main ingredient - which can be a vegetable or seafood if you eat seafood.
Way better than chowder made with the usual gluey roux!

Vegetarian as well, and also trying to eat low carb in the new year.
I roasted Quorn cutlets and broccoli in the oven with olive oil, salt, pepper, and fresh tarragon. After cooking I sprinkled some feta on the broccoli. It was good.

No, I've been making it for 50 years and just go by what looks right. I don't know that I ever had a recipe. At this point I don't even remember who showed me how to make it. But, I take a large jar of Duke's Mayo, add catsup, white vinegar, sweet pickle relish, finely diced red onions, a spice blend I make up and use on almost everything, and a little sugar. Whisk it all together and you've got Russian Dressing (or Thousand Island in some parts of the country).
But I'm sure if you Google "russian dressing" you'll find countless recipes with exact measurements.
