I know they are completely overtaken by hipsters but I love them. Besides avocado toast and guacamole, how else do you use them?

Before avocado on toast was hipster food, my godmother introduced me to it , she had been making it for years, with just mashed avocado, lemon juice, salt and pepper or seasoned salt and pepper, on regular toast, for breakfast. Love.
Eat half with a spoon, or top with seafood salad.
Asian avocado ice cream. Don't knock it until you've tried it.

I had a really good salad once in Key West is some fancy restaurant with Avocados. Basically it was half an avocado sliced and fanned out, sprinkled with about a tablespoon of crumbled blue cheese, drizzled with olive oil and a splash of balsamic vinegar and pinch of salt and pepper. DELICIOUS! I still make this at home every once and a while. Just don't over do the blue cheese.

If you ever make spicy chicken soup, a.k.a. "tortilla soup", float some diced avocados on top! Wonderful addition and balances out the spiciness.
So I'm doing a few weeks of carblessness between Thanksgiving and Christmas, and am eating eggs with veg for breakfast. Yesterday it was an avocado-parmesean omelette, which FYI is a great combination, today it was a spinach-onion scramble topped with pico de gallo AND a slice of avocado! Mmmm…. dieting....

In my family we had then as dessert, mashed with some sugar. In the school cafeteria they used to serve half avocados with a mix of tuna and mayo or shrimp and mayo in the middle. It was pretty good and I remember telling my mom about it, who was surprised that they could be used in a savory dish.

Lots of people here urging lemon juice with avocado, which I agree tastes good (and the citrus juice helps to keep the cut fruit from turning brown so fast when exposed to the air). But I think that lime juice tastes even better (and has the same effect as lemon juice does to delay oxidation) -- sprinkle a little smoked paprika on that too.

Mix together half an avocado, quarter of a cup of oatmeal, teaspoon of honey, teaspoon of lemon and tablespoon of apple cider vinegar. Smear it on your face for 20 minutes, it may burn a little.

Avocados are my favorite fruit. Every Sunday my grandfather used to bring me an avocado pear hidden at the bottom of his briefcase under six soiled shirts and the Sunday comics. He taught me how to eat avocados by melting grape jelly and french dressing together in a saucepan and filling the cup of the pear with the garnet sauce.

While inspecting a nursing home, I ran into some Mexican CNAs in the break room. This is what they had for lunch. It was stupid easy, and when I did it at home, I was pleased with the result.
Mash an avocado. Add a can of drained tuna. Add lime juice, hot sauce. They added a bit of chopped onion. Smear on corn tostadas.

The LA Times shared a holiday recipe that they called "Spicy Avocado Smash," which is basically mashed avocado, jalapeno, cilantro, lime juice, and pomegranate seeds.

I have a pasta recipe where you just throw some diced avocado and lemon into the hot drained noodles, and it melts and forms a rich yet tangy sauce. Throw on some diced fresh veggies, like tomato, basil, and red onion, and you've got a fabulous vegetarian main dish. Sprinkle with parmesean unless you're vegan.
Actually, no need for the recipe. That's pretty much it.

My grocery store sometimes has 4 ripe avocados for $1.00 right when the store opens. I got lucky yesterday and so far I have eaten a whole avocado chopped into chunks into red pozole and avocados, sprinkled with salt and pepper, on toast for breakfast. Delicious, but I wouldn’t spend the normal price for 4 avocados.
