R12 - chefs don't get a paid a lot unless they own or are part of owner of the restaurant. Particularly if they're on a work VISA - part of it is the prestige and fluffing your resume.
Plus, NYC is expensive and he has to work lots of nights and weekends - what's the point of having your own place?
