Timing is off because I got home at 3pm after helping friends with a project at their house and hadn't had lunch. I was given some figs from a neighbor's tree, so I sliced those and topped them with goat cheese -- meant to drizzle with honey but forgot (next time, they have a lot of figs). Cranberry juice with vodka, then a nap. Just got up and will be hungry again before a late bedtime, so will eat something for "dinner" then (maybe just a peanut butter & dill pickle sandwich with potato chips and more cranberry juice/vodka). It's been hot here, not much appetite lately.

R52 yes, like that. I didn't use breadcrumbs and I added a little bacon. I ate it with gravy that I made from the drippings of my schweinebraten pork roast. The roast was braised in chicken stock and basted with a Dunkel beer. The umami flavor was amazing. The roast itself was disappointing. It was mostly gristle and had a big bone going through it. I bought it because it was the only time I'd seen a pork roast with the the skin still on and I wanted to see if I could get it to puff up and turn into a cracklin. In my haste I didn't notice that big bone. I also made blaukraut, red cabbage with apples and onions.

R74, I miss bacon too, but the Morningstar Farms brand of vegetarian "bacon" is pretty good. It only produces a crisp result, so lovers of flabby bacon are out of luck -- I cook it in butter, but it's not bad (and healthier) if you just use a light vegetable oil spray instead. The smoky flavor is the whole point about bacon and this brand duplicates that pretty well.

by Anonymous | reply 90 | August 20, 2019 3:02 PM |
Barbecued chicken I made (whole range chicken I had the butcher cut into ten pieces; for the sauce: one small jar apricot preserves, one bottle of red dressing [I used Ken's French country], a packet of onion soup mix, one diced onion. Coat chicken pieces, place them in a casserole dish, add remaining sauce. Bake covered with foil at 375* for one hour. Remove foil after one hour and continue baking for 20-30 minutes). Asparagus, long grain rice, and a salad,
Scotch on the rocks for cocktails; cheddar cheese and stuffed olives (blue cheese).
by Anonymous | reply 91 | August 20, 2019 3:27 PM |
R90 I don't always prefer it, but often it less sodium, and if I pair with cheese, that's a lot of salt too. It must taste great, or I'm not having it just for the health benefit. Uncured ham tastes more like an old-fashioned ham-on-the-bone, cooked at home, rather than cold cuts. I do not prefer uncured bacon, pastrami, or corned beef. Those never do taste quite right to me, and their colour is usually off. I do prefer uncured turkey breast. They claim the nitrates/nitrites shall put you at higher risk for colon cancer, so why eat them if something else tastes just as good. Uncured sausages, like bangers and hot dogs are great too. Gilbert's uncured dogs are one of the best IMHO.

prewashed and cut small pack of hearty salad (big chunks of carrots and radishes included), to which I added seeds, small handful of party mix crackers-pretzels (I had no croutons and only very thin flat bread in house), chopped mushrooms, cucumber, Lebanese spice mix, fresh heavy cream, and yogurt. Can't you just use pasta sauce AS pizza sauce? I don't think there is any difference.
by Anonymous | reply 134 | August 21, 2019 4:19 PM |
R134 Of course you can use any sauce, but pizza sauce is a more concentrated form, usually only made from paste. Oregano is often included which isn't usually in "pasta sauce". Less water equals a less soggy crust, and one can use more, if desired, than tomato sauce.

I buy the fresh ones in plastic but one must look at the dates and buy the freshest one, and cook it within a day or two. It really makes a difference. The brick oven ones are more expensive then the "family value" ones, but also worth it. Never get the ones with meat. I put that on myself if I want. The prepared brick oven ones are better than buying dough and rolling it out myself.

I don't get buying frozen pizza that to me never tastes good. I buy a real pizza at a pizza place and wrap each slice individually and freeze it. It's just as easy to reheat as frozen and when it's done you have real pizza. Cheese, no matter what kind on a pizza or just cheese is never 100% the same once it has been frozen but it's so much better than frozen pizza.

I had a good haul at the farmer's market yesterday. Froze the okra to use in gumbo at a future date. Roasted the fresh corn to use in a corn/tomato/black bean/quinoa salad, but ended up consuming one ear fresh out of the oven. Still made the salad and it's chilling in the refrigerator now. But I also made bread from scratch for the very first time and it was so fucking delicious I had a few slices smeared with basil pesto (made from the basil plant on my porch!) and topped with fresh heirloom tomatoes (from my favorite market vendor); I'm no longer hungry.

They have the best bagels, sweets and everything else they sell except grilled chicken breast which is like cardboard, oh and potato salad and cole slaw which always tastes off. I tried it 3 times and I know it can't be spoiled every one of those times so it must be the way they make it.
Hey OP, I love this thread. I mean who else do I have to tell my nightly dinner too and I really enjoy reading what other posters had. I remember when they were a much, much smaller store across the street from where they are now. They were good but the selection is way better now. The pizza place between 6the and 5th on 7th really sucks IMO. Not too bad on the pizza but I had about the worst chicken Parm there I've ever had. Awful bread and worse chicken. I remember just eating the cheese off and dumping it. Their salads aren't good either so for me when I go to Methodist or across 501 6th to this pain doctor (bad back and right knee from an accident) my only choices are Purity Diner, if I have enough time to sit down and eat, and spend much more or La Bagel or 5 Guys.
I don't live in Park Slope. I live in Ditmas Park but I'm there very often. If I lived there and ate there all the time I'd probably gain weight like crazy. I don't order anything low calorie or carb, lol. I save healthy for home. When I get restaurant food I want to enjoy it.
They make almost anything on a bagel really well, IMO, I sometimes get a cinnamon raising bagel with the raisin/cinnamon/raisin cream cheese. I really like it but it's too sweet for me for dinner. I'm not crazy about their heroes. They are huge. One half is a meal but the hero bread they have, for some reason, tastes moldy to me. I tried it a couple of times. Their cold cuts though are always fresh and they have pretty good hot foods, especially the ribs and the baked chicken. I don't like their mashed. I think they're instant. As you know 5 Guys is right next door so I usually take about 10 minutes of just standing there to make up my mind. That 5 Guys now has shakes and I was very tempted but THIS time managed to not try my favorite flavor a vanilla shake. I saw people walk out with them and they look very thick and they put what looked like real whipped cream on top.

Pizza. Real pizza, from an actual Italian restaurant, 2 slices, but I just eat the cheese off. I'm not a fan of crusts other than that first pointy bite that burns the roof of the mouth. One had plain cheese and one slice with pepperoni and onions.

Cleaning out leftovers: I warmed a tortilla covered in pepper jack cheese in the toaster. When it was ready, I topped it with Italian sausage and avocado. A bit of kosher salt and smoked paprika to finish. And I had a glass of (agave) sweet tea.
Dessert was a bowl of Talenti non-dairy gelato with some chocolate chips and chopped walnuts on top

Yes, you sear it (briefly) after it's finished in the sous vide. Alternatively you can heat it in the oven with a thermometer until it reaches the desired temperature and then sear it. Or you can do that one in the reverse order (sear, than roast.) It's all about the temperature. I sous vide at 125, then sear.

A modified salade niçoise -- actually something of a cross between that and a Cobb salad: red leaf lettuce, a perfect vine ripe tomato from the garden, julienned bell pepper strips, hard boiled egg slices, potato slices and avocado, all tossed in a dressing of olive oil, red wine vinegar and dijon mustard. This was topped with pan-seared rare yellowfin tuna steak, cut into 1/2" chunks,. Despite the lack of capers, anchovies, green beans and olives, it was pretty good!

Chicken made indoors with BBQ sauce. The worlds most high calorie and high fat mashed potatoes. Riced them, then added a stick of butter, 3/4 of an 8 oz block of cream cheese, 1 cup of sour cream. The potatoes (6 large ones) were already salty enough from the boiling water. They were delicious and a small scoop was quite satisfying since they are so loaded. Oh and chives on top as a garnish. I figured if all the fat didn't kill than the carbs from the potatoes won't. There is enough left over for about 10 more portions. Yum.

Later I smoked a joint and had two small bags of salt & vinegar chips (one Miss Vickie's, one Old Dutch -- I couldn't decide, and I was high, so I bought both) and a Big Turk bar. I also had a pint of fresh strawberries. I was a pig.
Yes, I woke up fatter. But today is another day!

I couldn't buy the ingredients for what they sell the dinners for. Husband is having garlic shrimp with roasted cauliflower and asparagus. Also $9.00. I'm 59. R457 How did you prepare the chickpea and peanut salad? Those two things plus what else? Sounds delish.
by Anonymous | reply 461 | September 14, 2019 6:56 PM |
I don't prepare it - it's from a local greengrocers, Russo's, in Watertown, MA (link below, although I don't see it on the website.) It's about 3/4's chickpeas and what seems like about 1/4th blanched peanuts plus diced red peppers, scallions, huge plumped golden raisins and something curried binding it all together. But what that is, I have no idea. Maybe mashed chickpeas and yogurt? I'm not usually a fan of curried dishes, but it is amazingly good. I've seen several recipes for chickpea salads online and while some look like it (the simple veganista's, especially), most don't. And the veganista recipe uses brown raisins instead of golden, cashews instead of peanuts (which would be an upgrade to me), diced carrots, which Russo's version doesn't include; as well as mustard and vegan mayonnaise which I don't taste.
I get it whenever I go there, so the next time I do I'll at least list all the ingredients here.

It's a new recipe. You preheat the oven to 500 degrees, put the roast in, turn the oven down to 475 degrees for about 21 minutes (7 minutes per pound), then you turn off the oven and leave the roast in there without opening the door or taking it out for 2.5 hours. We'll see how it turns out. I also used browning sauce on it. I've never used that before

Why would anyone through away food they just paid for if there was nothing wrong with it, like as soon as they peeled back the wrapper even a little a stink to the high heavens stink wafted up to them.

Grilled porterhouse steak and some fresh corn on the cob with plenty of melted butter, washed it down with a tall Natty Daddy (8% alcohol, lol). Got it from a really small local meat shop that opened up near me recently - they specialize in fresh and smoked meats. It was kind of cool, as I got to see them cut the steaks to order for me.

Beef stew, made with chunks of ground chuck, onions, baby bella mushrooms, fingerling potatoes, carrots and parsnips> I added some Marmite for some extra color and depth of flavor.

R509, does 5 Guys sell Cajun seasoned fries now too? I don't get to go there too often, but I never noticed that if so. Their regular fries are fantastic - and they give you TONS of them too.

Lump crab meat appetizer, Sugo de carne over a plate of freshly made egg linguine - drained, not rinsed - with grated Parmesan and zucchini coins.

R516, I don't think it would be considered that, since I didn't use any wine (although I'm having some now). I just like classic American beef stew, with potatoes and carrots (like that canned Dinty Moore stuff), but I do little things to make it richer and a little more complex. I added bay leaves, and a few juniper berries, too. I even been known to add a bit of Baker's chocolate, but I didn't this time. I had already started on the beef, onions and mushrooms yesterday, but didn't add the vegetables until today (I put it in the fridge overnight to de-grease it). It's very rich, so that I can only eat maybe a cup for a meal.

R498, that roast didn't turn out that good. It was tough. But it was a tough cut of meat (eye of round). That's what the recipe said to use. It turned out the same way as if you cooked it at 350.
It wouldn't be a bad way to cook a much more tender (marbled with fat) roast, but I would leave it in for 2 hours instead of 2.5 hours
In a few weeks I am going to try cooking a roast at 225°. This is the recipe. Ignore most of the page, it's just talking for the sake of talking. Go to the bottom of the page for the recipe. It's from the Frugal Hausfrau (I can't make this up)
by Anonymous | reply 520 | September 18, 2019 12:25 AM |
Thank you R520. I really appreciate the recipe and that you came back to say how it turned out. I'm sorry it wasn't what you hoped but maybe the 250 degree one will be. I hear that slow oven cooking makes meat tender. Thanks again!

[R518] What is baked ricotta? How do you prepared this?
by Anonymous | reply 522 | September 18, 2019 12:42 AM |
I've done a round roast at 225 for 6-8 hours or something crazy like that and it turned out fantastic.
by Anonymous | reply 523 | September 18, 2019 1:07 AM |
R522 You buy a pound or so cube of fresh ricotta from a cheese shop - much firmer than what you get in a tub at the supermarket - and bake it for about 45 minutes at 350F. Let it cool, then refrigerate.
It has a browned crust and you can slice it. Great with fresh fruit for dessert or on a piece of toast with jam for breakfast.

Does 7-11 make good heroes? Fresh? I like their hot dogs with mustard and that melted cheese, if it's not the spicy one. One of those and bag of chips makes a nice meal, oh and a drink. I like diet slurpee. A few years ago you could get all of that for about 4 dollars.
by Anonymous | reply 532 | September 18, 2019 2:13 AM |
R526 I thought of that - I don't know. The guy I get it from makes it in some kind of mold because it looks like a pyramid with the top cut off and I assume it's been inverted to drain. I just know the texture is so different from what you get in a tub, the stuff you'd use for, say, making the filling for cannoli. That's much creamier and smoother. The stuff I bake has a texture more like cottage cheese.

Chicken salad, sweet with raisins and cranberries, from a deli counter. I've never had it sweet before and it was delicious. I'm sorry I only got 1/4 pound. I will go back for more. I also had the inside of a square potato knish with mustard and a diet peach Snapple. I hate the crust on the outside. I wish someone sold some kind of mashed potato that tasted like the inside of a knish. In NYC they cost $3.00 each and I feel bad throwing so much of it away but I really hate the outside and love the inside.

When I lived in NYC, there was a knish store where I'd pick up a treat when I wanted to carb out. It was near NYU/Union Square. Maybe Fourth Avenue? Any New Yorkers remember it? Could it possibly still be there?
I'd get a fat breaded knish filled with both a hot dog and mashed potatoes. Heaven! Of course I was young and effortlessly thin then....

Seafood salad 1/4 lb. made with that fake crab stuff and small shrimp. I wonder if the shrimp were real. It still tastes good.
3 breaded and fried chicken wing parts, two of the drum like pieces and 1 flat. A small handful of waffle fries. They were good. I never had them before.
Fresh watermelon, fresh pineapple, fresh cantaloupe, all mixed in a bowl like a fruit salad. Loved it but my tongue is a little swollen and sore. I wonder if I'm allergic to one of the fruits. Diet Mountain Dew

I never heard of the Cotton Candy grapes referred to by R561, but I see them at The Grapery website linked below (along with many other beautiful and intriguing varieties). According to their map, these have a short season (ending today!) but are carried by several supermarkets, including Trader Joe's. Warning... the dish is seasoned with hot bean paste. That stuff can be extremely hot. Extremely. The first time you make this recipe, you might want to cut the amount of bean paste from 2 tablespoons to just 1 tablespoon. Those who want to do that and those who don't will know who they are.
