I am grilling the eggplant, instead of breading and frying first.

I haven't eaten all day: I wasn't feeling up to it. But I finally cooked some basmati rice, and ate it with butter and salt and pepper.

by Anonymousreply 2August 17, 2019 3:11 AM

I made a delicious stir fry of chicken, broccoli, peppers and purple onion in a super-gingery black bean sauce. Served with sticky sushi rice.

Not a bit left over.

by Anonymousreply 3August 17, 2019 3:28 AM

^^ Chinese black bean sauce, not Mexican. For the record.

Celebrating my cat's seventh birthday ........ Roast pork loin with mashed potatoes, gravy, cornbread stuffing, green beans from my garden, strawberry shortcake.

My cat ate Purina Naturals with homemade gravy, and a small dish of vanilla ice cream topped with a sprinkle of catnip. He was, after all, the guest of honor.

This is so sweet I love animal people.

Happy Birthday to the kitty at R6.

I dined with a friend at an Indian place. It was Happy Hour. I had a gin and tonic, fried cauliflower in tasty sauce, tandoori chicken, raw tuna on fat crunchy rice, some vegetable thing, garlic paan and sauces. It was really filling for Happy Hour food.

Fettuccine Alfredo. Wow is that easy to make. The Alfredo part takes literally less than 2 minutes to make. I just wonder if I'll be able to reheat the leftovers without ruining it. It is very rich and my eyes were bigger than my stomach. The recipe was for one pound of pasta and I used 1/2 pound and cut the sauce ingredients in half and still half of that started to make me a little sick feeling. I made homemade chocolate cream pie for dessert and I could only get one bite down. I wonder if our bodies start rejecting heavily fat filled meals as we get older. I can eat most of a cheeseburger deluxe so this meal must have really been over the top fat filled with butter, heavy cream and grated Parmigiano-Reggiano. I never made it before so I didn't know how my body would react. Well, it sure did taste good though.

by Anonymousreply 29October 4, 2019 12:44 AM

by Anonymousreply 36October 4, 2019 2:06 AM

Another salad with leftover chicken tenders only this time I made orzo and dinosaur kale in tomato sauce and grapes for dessert. Water. Raw or cooked I seriously believe kale should have stayed a decoration on a salad bar and not a food for consumption. Now I have very tasty orzo in tomato sauce that I have to pick the kale out of before I eat it.

by Anonymousreply 53October 13, 2019 9:59 PM

I made calzones tonight. I wish I could find a perfect pizza crust recipe. mine, no matter what one I use, is always not quite right in ome way or another. obviously it's me doing it wrong but it's very frustrating as I did get it really good one time.

by Anonymousreply 54October 13, 2019 10:04 PM

This. The recipe is a trusted friend. I only trim the green beans and don't cut them the way La Stewart does in the accompanying photo. It improves the presentation markedly. I also add chopped kale to the pot when the pasta goes in. For the pasta, I prefer rotelle instead of cavatappi.

Before serving, dress it with freshly grated parmesan. Nothing could be easier than this and nothing tastes better.

Spicy Hoisin Chicken stir fry, made with garlic, broccoli and sriracha, over white rice.

by Anonymousreply 67October 14, 2019 1:43 AM

Don't be simple minded, R65. You can have the same number of carbs with pasta, alone, as you can have with pasta and potatoes, or even pasta, potatoes, and whole grain bread. You simply cut back on the quantities of each. Duh.

By incorporating the different foods into the meal, you gain the benefit of a broader spectrum of nutrients.

by Anonymousreply 78October 15, 2019 9:52 PM

R77 Your recipe is nearly identical to mine, except I don't add tomato. I also add a couple bay leaves, and some coriander and Italian parsley. I may just try your version, as I've found a bit of tomato paste can really enrich so many dishes.

by Anonymousreply 79October 15, 2019 10:18 PM

Ribeye, roasted broccoli with garlic, and a wedge salad with homemade bleu cheese dressing.

by Anonymousreply 80October 15, 2019 10:34 PM

Pizza, salad, way too much dressing. I'll be sorry when I get on the scale tomorrow. Truth is I only eat salad as an excuse to have dressing so I don't often eat salad.

by Anonymousreply 81October 15, 2019 11:01 PM

I'm being very bad tonight; Fried chicken, mash & gravy. I may force myself to eat a salad to assuage any guilt... maybe. A glass or two of Sauvignon Blanc to round out the evil.

by Anonymousreply 82October 15, 2019 11:13 PM

I have managed to stay away from there for a little over 2 years and I saw a commercial and I'm giving in just this once. I didn't even try to talk myself out of it. I want it. I may even get a small vanilla shake. I hope not, but I may. I will not allow any salad to come near me.

by Anonymousreply 91October 17, 2019 8:36 PM

Found a pasta machine brand new in the box at a thrift store for $5.00! Watched a couple of youtube videos and made homemade ricotta/parmesan/reggiano raviolis with tomato sauce made from some of the last garden tomatoes.

by Anonymousreply 92October 17, 2019 8:45 PM

roasted chicken breasts with the bone in, seasoned with fresh oregano, garlic and sliced lemons, and roasted vegetables: yellow squash, zucchini, red bell peppers, broccoli florets and brussel sprouts. seasoned with salt pepper and a high quality olive il. Wholesome, delicious, and for dessert I will have two small cookies, and herb tea. I will then relax with my DVD collection, or Amazon Prime, HBO or Netflix, and forego watching any news shows. Will someone please call me when Trump leaves office?

by Anonymousreply 93October 17, 2019 8:48 PM

Fresh pasta is great. And after you've done in a few times, it's easy. Most everything in the kitchen is a pain in the ass the first time you work through it. But this will resolve itself quickly. Lasagna noodles. Linguine. Ravioli. It's all great when it's fresh.

by Anonymousreply 94October 17, 2019 8:51 PM

Brown rice, black beans, corn, shredded cheddar and shredded chicken. Avocado slices.

by Anonymousreply 95October 17, 2019 10:21 PM

Chicken soup with Matzo balls again.

by Anonymousreply 96October 18, 2019 1:35 AM

What's the difference between matzo balls and dumplings? My dad used to love both. I tasted matzo ball soup but never chicken and dumplings. I liked the matzo ball one.

by Anonymousreply 97October 18, 2019 2:48 AM

Homemade sabich and whole masoor daal. Made it myself, suck it bitches.

by Anonymousreply 98October 18, 2019 3:02 AM

R97 They're pretty much the same really. Matzo meal is just dried up, crushed Matzos... crackermeal essentially. Other dumplings are made with flour. Good Matzo balls are always made with rendered chicken fat, or schmaltz.

by Anonymousreply 99October 18, 2019 3:06 AM

Sounds delicious R99. I love chicken fat. I once had some and fried potatoes in it. It was better than bacon grease. I saved the rest and used it for roasted carrots, again, delicious. I may take a shot at making my own matzo balls.

Thanks for the information!

by Anonymousreply 100October 18, 2019 3:16 AM

Cup of chicken broth, smoked gouda cheese, good crackers, white wine. I am stuffed. Small Frau here!

by Anonymousreply 101October 18, 2019 3:21 AM

R100 Cheers...They are super easy to make, just grease up your hands well, as it can get fairly sticky business. I add white and black pepper, and prefer mine cooked in broth, not water. I discard that broth they boiled in, then pop them into the soup. Always keep them separate until ready to serve.

by Anonymousreply 102October 18, 2019 3:22 AM

Genoa salami and provolone cheese on a seeded roll with tomato and mayo with potato chips on the side and 1 1/2 Entenmann's chocolate crumb donuts. When I reached for the second one I knew I made a mistake buying them. I could eat the entire box if I let myself. If I can't keep it to 1/2 a donut tomorrow I'm throwing them out, after I pour something toxic on them to make sure I won't in a moment of weakness take the box back out of the garbage.

by Anonymousreply 108October 20, 2019 12:13 AM

We're thinking of getting one of those meal services. Where they deliver your food once a week and you cook it. But it's not complicated or tricky. There are also some services that deliver the meals already cooked and you just heat it and eat it. I'm very confused.

R108, give the leftover doughnuts to a homeless person, who probably isn't on a diet and will appreciate them properly.

by Anonymousreply 112October 20, 2019 2:10 AM

Last night I made a recipe I tore out of a magazine at my doctor's office. French Onion Roast Turkey Breast. It took FIVE POUNDS of sliced onions. The turkey came out great, though.

by Anonymousreply 113October 20, 2019 2:20 AM

There aren't any homeless people in my neighborhood and I don't have a car to go look for some, but that would have been a nice thing to do. Maybe I'll give them to the birds. Can sweets or chocolate hurt them? I don't think so. I meal gulls eat garbage, right?

by Anonymousreply 114October 20, 2019 3:04 AM

I have some little Debbie. Ales I want to get rid of I wonder if I can leave them somewhere for the homeless

by Anonymousreply 115October 20, 2019 4:37 AM

Lucky you, R114. And it's nice that everyone in your neighborhood has a home -- that's sure not the case where I live.

Chopped salad with a few odd ingredients:shredded purple cabbage, shredded carrots, walnuts, bleu cheese dressing, and a half sandwich made with Kosher veal bologna, lettuce, tomato, mayo, and Coleman's mustard. One rather strong dark Bacardí & Coke.

by Anonymousreply 132October 25, 2019 3:25 AM

R131, I LOVE limoncello! What brand do you buy and where do you get it? I know a guy who swears by the homemade stuff at a place in Amalfi, but that's beyond my means. I just buy the Caravello brand at a supermarket & keep it in the freezer -- when strawberries are in season, I freeze them individually, put a big one in a small liqueur glass, & cover it with chilled limoncello -- looks & tastes stunning!

I hope you feel better soon R38 but that sounds really delicious.

by Anonymousreply 139October 26, 2019 2:49 AM

R138 I made Swedish meatballs and egg noodles tonight too! No vegetable sides, as I may have a slice of pumpkin pie later. Wishing you a speedy recovery... sounds like you may be getting an implant soon with the bone graft?

by Anonymousreply 140October 26, 2019 2:50 AM

It was perfect for tonight and I feel fine, thank you, R139 as she’s very generous with the post-procedure opiates. Didn’t hurt while she was doing it and I only needed one pain pill last night after the Novocain wore off.

Not that soon, R140. Maybe in March. In the meantime my little flipper crown will cover the open socket and hopefully help retain the bone chips long enough after the sutures dissolve to stimulate the bone to grow. It’s an upper tooth (#5) and she needs more bone up there to anchor the post or otherwise it’ll be in my sinus cavity.

I had meetings all morning so when I finally came up for air around 12:30, I wanted breakfast. Pecan pancakes with bacon on the side. I ate every crumb. Tonight, I had a cheese omelette with one half slice of toast. Tomorrow I'm eating salad and oatmeal. I have to get it together.

R160, my husband and I used to go camping and canned Dinty Moore beef stew was one of our favorite things to heat over the fire or on a Coleman stove because it was easy and filling. We also loved cherry/vanilla baby food in a jar with packaged vanilla wafers for dessert. Those were the days! Lots of fun, but the food is better at home, with a real stove and running water.

Chicken Gumbo, and some chicken salad I made from the breast .... had the chicken salad on Olive Oil & Rosemary "Triscuit imposters" from ALDI as a starter... Really nice combo. Readers may freak, but ALDI version is decidedly better... less greasy, made in Canada vs. Mexico. Small salad of chick peas, garlic infused olive oil, grape tomatoes, baby radishes, red onion, and croutons. One very dry Beefeater Martini (w/extra olives) whilst making the chicken salad.

by Anonymousreply 178November 3, 2019 3:09 PM

R170 (and everyone else), have you tried making ratatouille in the oven? So much easier than cooking each vegetable separately on top of the stove and then mixing them, and I think that the roasted vegetables have more flavor and better texture. There are a lot of recipes on-line -- Ina Garten's is typical. I add a couple of things to the original ingredients: peeled, chopped sweet potatoes (the red-skinned orange ones that Americans erroneously call "yams"), and large mushroom caps.

I usually serve that with polenta, which I've also learned to bake in the oven per the recipe at the link. I just use regular cornmeal and that works fine.

by Anonymousreply 204November 6, 2019 10:22 PM

Nothing wrong with that R204. It sounds healthy. I'm not one of those carbs will kill you people. People in Italy are very healthy and most eat pasta at least once a day, real white pasta, not some cardboard or vegetable version. Don't be hard on yourself. You did good.

by Anonymousreply 205November 6, 2019 10:27 PM

They use semolina flour. And the Mediterranean peoples love beans too. Lentils, Garabanzos, Cannellinis, yeah. And lots of fresh veggies and salads. They use olive oil. Goat cheese, etc. Not butter, and Garlic oozes out of their pores. Healthy as shit. And no they don't eat pasta "every day."

R220 I have a couple of questions if you don't mind.

Did you do it all on the stove or use the oven too and if so at what temp?

When you use grass-fed beef do you have to cook it less than standard beef?

BTW, it looks really yummy.

by Anonymousreply 221November 9, 2019 2:56 AM

R221 Thanks...I would recommend cooking grass-fed steaks for less time, (they can be quite lean) but the pot roast was the chuck, and it requires low & slow to break down the collagen and marbeling of fat, just as grain-fed beef. After browning, (in a heavy, enameled cast-iron dutch oven) I popped it in @ 325* oven for 3hrs. (a bit longer is fine too, mine wasn't so large)

Leftovers -- not turkey because I didn't do Thanksgiving dinner. But I had eggs and vegetables to use up, so I chopped some bell peppers (red, yellow, orange) and onions (green, white, purple) and sliced some garlic, then sauteed those in butter -- whisked some eggs and poured them over the vegetables, scrambled it all together and topped with grated Parmesan cheese. Squirted a little Kumana Avocado Sauce on top and ate with a toasted sourdough English muffin and a glass of Australian Shiraz. So colorful with all those vegetables, especially cheerful on a cold, grey, wet, blustery day like this.

The SnB is much lower in sodium and fat than it used to be so they probably changed the recipe and while it wasn't bad, it wasn't what I remembered from my childhood, neither were the supermarket pork chops for that matter. I saw they were really lean and of course they were on the tough side and I can't afford really good pork. At least now I know I have not been missing anything all these years of staying away from it.

It's Fish Friday! A walk to the chippy for fish, chips and mushy peas.

Filets Mignon, baked potato, asparagus.

And I have a head cold so I could barely taste it.

I bought some grass fed 85% beef for hamburgers and will then have it with shitty Martin's (taste great but probably made with shit) potato buns and Wise potato chips. I tried the organic brands made with good oil and they suck. They also don't use enough salt on them so they're bland, maybe that's why they suck.
