It's 4:30 am in Texas. I just got out of bed hungry, and I had half a filet of Aldi Parmesean-crusted tilapia, and it was outstanding, straight from the refrigerator. It doesn't even taste like fish at all. I'm sure that has some larger implications that are too whelming to think about, but for now I'd just like to enjoy the satisfaction.

Anyway, I thought it would be a good idea to bump the new thread, international friends. Going back to bed now.

I stopped taking my blood pressure and diabetic medications five days ago. And Lyrica. I was groggy and in pain, suggesting side effects. Overwhelmed, really.

I don't know, r23. I'm being extra judicious about not eating carbs in the meantime. Or even eating what might be considered "too much." But I've read that muscle pain, leg and back pain x 3, joint pain x 3, nausea X 2, headache, cotton mouth, and blurred vision are all side effects of the combo I'm taking. Metformin (for diabetes) may cause "unusual muscle pain, headache, and weakness."

Over the past few months, I have developed so much pain, it only makes sense to look at EVERYTHING, including medicine, particularly since it is unknown, really, how medications may exacerbate the combinations of each other's side effects.

Today, I have no blurred vision, and some of my back pain has subsided. I did have an unusually bad headache yesterday, however.

The gradient color is an inherent part of the original LC design, r44. They're making ones they call "matte finish" now, which are just a single color tone, but I don't like that as much.

When I bought mine, my only choices were Flame, Yellow, and Brown. Though I don't care for orange in general, I liked it more than either of the other two.

I only have All-Clad now. So much lighter. And it works just as well for braising and stovetop cooking. In fact, I prefer it for stovetop cooking. Hot spots are less of an influence.

We've had them in the family since the 60s when Orange was the only color and there was no gradient.

Here's another green with the grey interior. All the seller says is "green." It's got the bare cast iron bottom, so it's an older piece. It has the number 20 on the bottom instead of a letter, so it's not one of the oldest pieces, but still...I don't know, r83. It looks like Fennel, but mine were newer than that. I think Fennel was retired in 1998-99, so this piece is not as old as 1979, but no newer than 1999.

Big help, I know. But that's the best I can do, at least for now.

Thank you, R34. Birding-by-ear, as it's called, seems to happen by osmosis-- especially the more common bird calls. Most birds have a distinctive tone and song. It takes about the same amount of effort as distinguishing a Hank Williams from Aretha Franklin from Kylie Minogue from Drake, etc. It's just a matter of looking to see what bird it is the first few times, then you get it.

Well, easy to say now I guess. Thinking of it, I learned the lion's share of bird calls in my early twenties.

I forgot what I came here to post. It didn't have to do with birds. Or food.

Anne of Green Gables is on the DVR, recorded from Turner Classic Movies the other day. I hope I can watch it tonight after a hot shower, on fresh sheets. Oh that's what I came to say-- I washed all my sheets and blankets. One of life's simple pleasures.

PML/r98, I thought of you this morning when the sound of rainbow lorikeets woke me up. As I said I’m not very good at knowing one bird from another but you can’t miss these birds. They descended on a huge tree in my neighbours yard which I think grows some sort of nut. They were very loud, but very pretty.

I don’t live far from the city centre PML, about 10km, so it sometimes amazes even me that such exotic looking birds are hanging around here watching people go about their day commute. The lorikeets aren’t always as visible as the cockatoos however, the cockatoos seem less afraid of people. Although I have no doubt that after the lorikeets finish with my neighbours nut tree, they’ll eat all the peaches I’ve been unable to reach at the top of my tree. And after that they’ll wait for the persimmons to ripen and go for those. But that’s ok there are only so many persimmons I can eat. If I can I’ll take a photo of them in the trees and post it. I’ve never tried to post a photo, not sure we can.

I love the clarinet. Here is the concerto Benny Goodman commissioned Aaron Copland to write for him. I find it, and the clarinet in general, to be sublimely underwhelming.

We were in kindergarten together, and then my mother sent me to Catholic school, and I never saw or heard from him again. I know his street address. I’m 45. I have met 5 others born on the same day, year and city as I was. One was a date. He asked my birthday, I jokingly told him to guess. He guessed the exact day. I asked if he’d taken a peak at my drivers license. Certainly not he said, he just picked that date because it was his birthday. Turns out we born two hours apart, in the same city but in different hospitals. The romance fizzled but we remain friends.

I grew up in North Jersey, r152, and subs are what they're called, as the roll is baked in the shape of a submarine. It was a particularly good one today. All the meats you'd imagine, topped with provolone, then toasted just a little, then topped with lettuce, tomato, olive oil, and vinegar. Made to order at my local supermarket.

I had the most horrible sausages for lunch. Pork & Bramley Apple! They were TERRIBLE. Sounded nice...but no.

I had a little Treacle Sponge for desert, with some cream instead of custard. That WAS nice.

Im having people over today (whelming). It’s my boyfriend’s birthday. We’re having a BBQ. We’ve invited a quite a few people, some with children. I like kids, but there’s one brat among them who gets on my ever last nerve. He has 2 siblings who are perfectly well behaved, but this kid is an obnoxious smart arse. How he ended up in that nice family, I don’t know. He’ll be the reason my house will be a bigger mess than it should be when everyone leaves.

I went over to the Amazon lockers to pick up a couple of packages. One of them was in the top locker and the parcel was right at the back and I literally couldn't reach it. I tried stretching as far as I could, but literally, NO!

I was standing around trying to work out what to do and a nice smiley woman came by and said "Can't you reach something in there? Are waiting for someone tall to come along?"

Yes and yes, I guess so.

Then her husband who was smaller and older than me (but more agile, clearly) jumped up a few times and just managed to knock it forward and grab it.

It was so nice of them.

I can't do things like that anymore. I can't climb into my loft either. I used to be able to lift myself up into it.

But still, stupid idiot from Amazon putting it so high and pushing it to the back.

I've been eating scrambled egg whites wrapped in soft, steamed low-carb tortillas for a week or more now. That's about it. Well, a Cara Cara Orange here and there, a kale chopped salad here and there. On plain white plates.

The BBQ was fun. The weather was perfect. Our friend’s son behaved appallingly as predicted. Such an obnoxious, rude, disobedient brat, made more evident by the fact that his sisters are lovely. At one point a couple of the dads took a few of the kids to the park for a game of basketball. As the kids left I could hear the brat bragging about how he’d beat all the other kids. He returned fuming because my nephew had resoundingly beat him in a game of one on one. He sulked for a good 45 minutes which kept him quiet and out of trouble much to everyone’s relief. Other than that we had a lot of laughs. Now I’m back to being underwhelmed and grateful for it.

I'm in Texas, but I like bourbon biscuits and I'm thinking of making my own.

Of the three readily available to me, Parle Hide N' Seek Bourbon Black is the best brand, followed by Britannia and finally, dead last is the standard entry-level Parle Bourbon biscuit. I don't remember those ones being as bad as they are now. I don't think it's a coincidence that the quality of the standard Parle bourbon biscuits steeply declined around the same time Parle made available their much more expensive Hide N' Seek Bourbon Blacks available here. The old standard Parle has half the biscuits sandwiched BOURBON stamp down, some missing a top altogether, some missing the cream filling. And there's no flavor. What happened?

Anyway, I can buy a whole set of British biscuit cutters online for $20. I only need the Bourbon one, though.

I just watched Dancing with the stars. Once again the very nice, but terribly uncoordinated former cricket player was not eliminated. For the love of all that’s holy, can the Australian public stop “saving” him and put the poor man out of his misery, he can’t dance to save himself. Bit of a mix r204. The ex cricketer is revered among cricket fans, but I had no idea who he was. One was a personal trainer from the Australian version of biggest loser. Another’s claim to fame is he the handsome son of a famous couple. So I guess most are well known in they’re particular niche, but I wouldn’t classify most of them as “stars.”

I went to CVS to buy the blood pressure cuff my doctor recommended, but it cost $30 more in the store than it does online. So I ordered it online. Plus some dental floss.

Then I went to two art stores to find transparent acrylic paint. Someone recommended Golden High Flow Acrylics, but neither store had them. I'm going to have to use something else for class tomorrow.

I had lunch with my ex today. I texted him to say I’d run into his mother at the shopping centre and she was as funny as ever. He said he wasn’t far from there so why didn’t I come and have lunch with him. He’s mostly lost his looks, his hair and his waistline, but there’s just something about him. He’s very likeable and laughs easily. The sex appeal is still there. I guess you either have it or you don’t regardless of what you look like.

Unfortunately, that ship has sailed, R236. I've been taking medication for Type 2 diabetes for almost 10 years. Since a previous doctor's visit several months ago, my A1C went from 7.2 to 6.7 without any additional medication. I'm pretty good about watching my diet. Type 2 diabetes runs in my family. Practically gallops.

6.7 is good though. Anything under 7 means far less side effects. Good on you. A lot of type 2 patients don’t watch what they eat at all.

Thanks, R239. One reason I do watch my diet is because I know from certain family members what can happen if you don't. My grandmother was completely blind for the last several years of her life because of diabetes, although I'm pretty sure she was Type 1. Both my grandmother and a cousin had to deal with amputations. I apologize for the whelming details.

My regular doctor recently declared my diabetes "in remission." I'm at 6.1 or 5.9 for over a year now. My endocrinologist told me I don't need to see her regularly anymore. I still have hypertension and peripheral neuropathy, but the neuropathy is said to be "not diabetic."

Tonight I am seeing Gloria Bell. We like to park once (so much less overwhelming), so we're eating at a Cheesecake Factory. I have not been to one since whenever the one near Mazza Galerie in DC opened. The waitress dared to insist that her pronunciation of "bruschetta" was the correct pronunciation of "bruschetta," which, of course, it was not. But she would not stand down.

Not going to the Cheesecake Factory again has never represented a huge sacrifice, mind you. I hate cheesecake, for one thing. And it's one of those heat-up-bag places, right? I'll report back if I feel there's anything worth reporting.

I went to watch my teenage nephew play football this morning. I complained to my sister that it was a lot windier than I expected and I hadn’t dressed appropriately. My sister gave me my nephews jumper to wear as he didn’t need while playing. The jumper has the name and the logo of the football club across the front. I forgot to take it off afterward and on my way home ducked into the supermarket near the football ground. At one point however two young boys from the same footy club ran into the aisle I was in and started yelling at each other. When I looked up I noticed a man was staring at me with a “why don’t you do something about about your bratty sons” expression. That’s when I realised I was dressed like these two kids and probably appeared to be their parent who was just ignoring their appalling behaviour. Before I could say “oh they’re not mine” a woman appeared out of nowhere, grabbed each one by the arm, whispered a furious threat under her breath and dragged them out. I looked at the man and he dropped his gaze. I can now say that for a second I knew what it was like to be parent judged by a total stranger. It was whelming. Lol.

Actually, quite a few things, R271, including some travel. I just need a few days to breathe and decompress. Retirement was my choice, and I certainly want to try to make the most of however many years I have left, while I'm still able to be (reasonably) active. But I can also be very happy staying home and reading, cooking, watching old movies and hearing about other people's underwhelming lives on DL.

I retired 8 years ago. I thought I'd be able to sleep in every day. When I was working, I set my start time (we had flexible hours) as late as possible -- 9AM. So I woke up around 7:30 -- with an alarm clock. Now, when I rarely have any reason to get up early, I am usually wide awake no later than 5AM.

The first day in a LONG time when I had nothing scheduled, so I attempted to attack my list of "to-dos." Washed the car. Then I was planning to smoke a nice brisket, but when I plugged in my electric smoker (after soaking and loading the wood chips), nothing happened. I guess it's dead. So I ended up doing it in the oven, and even at 250F, it cooked much too fast. And it ended up kind of tough and gristly. I did get a bunch of other stuff done, however. And this is the last week of my volunteer tax preparation (Tuesday, Thursday, and Friday) and I'll have more free time next week.

For the past four weeks, I haven't eaten anything with flour or added sugar (and lost 8.4 lbs, look and feel great). Today someone in my office brought in a few boxes of Dunkin munchkins. In a moment of weakness, I took two to have with my afternoon tea. I only ate one because it tasted so disgusting. I can still feel all the fat left on the roof of my mouth. Are they always this bad and I just never noticed? Or could this be a bad batch?

In other whelming events, I have a gray whisker growing near my eye. It's not an eyebrow hair or part of my beard, just a random whisker sprouting. A few years ago I had one on the side of my nose.

I’ve baked sausages before r357. I forgot about that as an option.

Last night I made an antipasto platter to share with a friend, his dad took a turn and he had to take him up to the hospital. So I ended up eating way too much of the havarti cheese, quince paste, prosciutto, sicilian olives and salmon dip in my own. I left the rest, but it’s hardly an example of self control. Now my friend is coming over tonight instead and I’ll have to go out and get more.

My baked potato came out perfectly. Something I've been trying to achieve for YEARS.

Crisp on the outside, creamy in.

Combination of leaving it in 15 minutes longer and by accident (it rolled in) having the potato in the MIDDLE of the oven. Usually I have it at the front, for easy turning.

Sausages were nice too. I'm going to stick with Cumberland.

Odd, my cooking often turns out better when I post about it on here. My soups a few months ago, when I posted about them were also very good. But in recent weeks they've been awful. Just REALLY bad. Icky.

America's Test Kitchen - Best Baked Potatoes:

Salt and pepper

4 (7- to 9-ounce) russet potatoes, unpeeled, each lightly pricked with fork in 6 places

1 tablespoon vegetable oil

To produce baked potatoes with an evenly fluffy interior, we figured out their ideal doneness temperature: 205 degrees. Baking them in a hot (450-degree) oven prevents a leathery “pellicle” from forming underneath the peel. To season the skin, we coat the potatoes in salty water before baking; we crisp the skin by painting it with vegetable oil once the potatoes are cooked through and then baking the potatoes for an additional 10 minutes.Serves 4

Open up the potatoes immediately after removal from the oven in step 3 so steam can escape. Top them as desired, or with one of our toppings.

INSTRUCTIONS 1. Adjust oven rack to middle position and heat oven to 450 degrees. Dissolve 2 tablespoons salt in 1/2 cup water in large bowl. Place potatoes in bowl and toss so exteriors of potatoes are evenly moistened. Transfer potatoes to wire rack set in rimmed baking sheet and bake until center of largest potato registers 205 degrees, 45 minutes to 1 hour.

2. Remove potatoes from oven and brush tops and sides with oil. Return potatoes to oven and continue to bake for 10 minutes.

3. Remove potatoes from oven and, using paring knife, make 2 slits, forming X, in each potato. Using clean dish towel, hold ends and squeeze slightly to push flesh up and out. Season with salt and pepper to taste. Serve immediately.

I cooked the baked potato recipe.

The skin was indeed crisp

and the inside (the flesh) was creamy, but the taste wasn't so good. It had that "undercooked" icky taste you get with an undercooked baked potato, something I managed to kick two nights ago.

So I go with a longer cook at a lower temp.

More feedback:

The vegetable oil made it greasy and the salty water thing, I couldn't even taste it.

Moving on from baked potatoes.

Another thing I've never been able to master is bread making.

I have the simplest wholewheat loaf recipe and the several times I tried to make it, it was a big fail.

So, I'm putting it before the group to see if the magic will work again with this.

I'll have to go buy another thermometer....I'm hoping this will help with my yeast problem.

I'll report back with the results.

Went out for breakfast. Went to a place where they make semi-decent American breakfast pancakes (because it's nice to have them cooked FOR me for a change).

She'd already poured maple syrup over the pancakes - I told her off (she was a sort of bossy woman herself). I just explained that she should leave it to the diner to do it. In America they'd never do such a thing.

My morning was downhill from there.

Went to a kitchen supplies shop for my thermometers (one for the oven, as recommended here).

Took the train home from Ladbroke Grove.

I've seen douche bags take the top of the patties, then fling them up towards the ceiling, to which the (somewhat melted) butter then adheres. I guess if a place is air-conditioned enough, they may stick to the ceiling, but once, I saw one land on a table, causing its inhabitant to shriek as if the ceiling were falling in on her.

In England, where you can get them, they come wrapped in a sort of gold foil...and they're usually too hard to spread.

In some places here (in London) now you can get (inferior) American Muffins - but they don't "get" that in America (where they come from) you spread butter on them. They make a big kerfuffle about finding you butter. One time I was in Starbuck's (or its equivalent) in London and there was an American gurl working in there and we had a conversation about this.

No, R462! The ideal is for the bottom number to be below 80, but considering that it was 100 a couple of weeks ago, you're doing very well at 80. At my most recent check-up a couple of weeks ago, mine was 130 over 70. I asked my doctor whether 130 was a little high, but he said it was fine.

I woke up at 2:30 am and, as of 4:34, have not gone back to bed. It's all the prescription drugs I'm taking, mostly for blood pressure. My blood pressure has improved enormously (I had stopped taking all of it for about a month, and my BP went sky high), but my vision is blurry now. I can't drive at night (I don't drive, but I absolutely would not be able to do so at night now. The new style of headlights take up my entire field of vision, which is not the case when I'm not taking these drugs.

And I wake up in the middle of the night and don't/can't go back to sleep. I feel like making coffee, but I keep thinking I'm supposed to go back to sleep. I only got 3 hours sleep so far, max. I only drink decaf now (Peet's doesn't suck), but I still feel as if I shouldn't drink it at this hour.

I end up listening to classical24 internet radio. I like Garrett McQueen's voice. Plus, he's gay. Sometimes he plays newer music. And sometimes black classical music. And the traffic here is so much less hostile than at other times of day.

I’m spending the Easter long weekend in the nations capital, which is Canberra and not Sydney like lots of people believe. It’s incredibly clean, very very quiet, has lots of big open spaces, the food is delicious and yet it’s quite possibly the dullest place I’ve been to in quite a while. Basically if my accountant morphed into a city he’d be Canberra, very nice, incredibly efficient, waspy and boring as all get out.

Made a soup.

Big failure.

It was a tomato and carrot soup.

No onion, no herbs, no cream.

Just tomato and carrots and stock.

She says don't add anything else it will ruin its supreme taste.

So, I didn't and it was awful.

In the end I added a spoonful of cream and that made it a little better.

I HATE making bad soups.

And her cookbook was very expensive. So now I don't know if I can trust anything else in there.

The side effects of taking blood pressure drugs have come to bear in full force. My vision is so blurry, it takes about half an hour to see my computer screen clearly from ~two feet away with my glasses on. Instead, I look at it with my glasses off from about a foot away. And even now, there are things floating in my visual field. All of this went away when I stopped taking all this shit for BP. They say high blood pressure fucks with your vision. I say [italic]dealing with[/italic] high blood pressure is what fucks with mine.

Also, I see this red dot inside my head all the time when I change my focus. That had gone away completely, too. It's worse now.

And I'm waking up earlier in the morning. Today I was actually able to sleep until 3:58 am. Wonder of wonder, miracle of miracles. Last night, it was around 2:00 am when I woke up.

But my blood pressure is much lower.

The fact you're having such a negative reaction to the pills is a clear sign for you to stop taking them immediately.

In the meantime you need to read up on what causes high blood pressure and see what you're doing that might be causing it. Do you exercise enough?

I'd also find a new doctor.

R473, I can't find the actual recipe you used anywhere online, but something I am able to glean about the author is that she wrote her two books as a response to her own overdependence on recipes. I hardly think she'd mind your not following hers to the letter.

Do you want to serve this soup hot or cold? If cold, I'd start to add cream and salt and chiffonaded basil and keep tasting it. If hot, I'd first heat it up, then make those additions.

Is the balance more towards carrot or tomato? If carrot, you may find orange juice or zest a helpful addition. But not too much.

What don't you like about the soup you've made?

r478, because of arthritis and lumbar spinal stenosis, I have not done a lot of exercise in a long time. Walking is literally painful. But at this point, I feel I need to try something different than what I've been doing, so...

I did manage to walk an entire 0.6 miles, partly uphill, last week, however. Now that the weather is nicer, maybe I'll do that again.

I don't really eat that badly, though. I've given up, for the most part, things like ice cream and cake. I do eat pizza and pasta still, but not in huge amounts. I eat vegetables and fruits, and even meat, which is, I suppose, my least favorite category of food.

It might be the taste of the stock you don't like, r488, and if the soup is too thin, you may have used more of it than you needed. I use water when a recipe calls for stock and I don't feel like adding a meat element to what I'm cooking.

Also, what are you using for tomatoes? I don't use fresh tomatoes in soups or sauces unless I can get ones that are absolutely fresh and delicious, which tomatoes made in the USA except for a few months in summer are not. And when they are that good, I hate to waste them by cooking them. So...I use whole canned tomatoes any time I am going to cook tomatoes. I break them down by pulsing them a few times, using a blender or food processor. Diced tomatoes suck because they add some chemical that allows them to maintain their hard edge, a textural nightmare.

I agree.

I lived in NYC in the 80s and noticed how awful and often tasteless tomatoes were in America in comparison to England. Thirty years on they're just as awful here now. They taste like watermelon.

Another thought, London. You could cook up some more tomatoes and carrots, drain off the liquid, puree them, and add them to your soup. Add salt during cooking. Keep adjusting w/cream and salt. Oh, and the basil. If you're serving it cold, you may want to hold off on the basil until you serve it.

R472, I'm not sure DL is the best place to be getting your medical advice. That said, you should definitely let your doctor know immediately about the side effects from the BP medication. Your blood pressure was dangerously high before, so stopping the medication immediately without first talking to your doctor might not be the wisest course. Good luck.

I got up this morning and used the toilet and it sounded funny when I flushed. Then I turned on the water in the sink and -- nothing. Usually when the water gets turned off due to construction or repairs, we get advance notice. Or when there's a water main break, we hear about it. So I went downstairs and discovered that someone had turned off the main valve outside my garage. Weird.

I've been googling someone I dated in NY in the 1970s, and just discovered his brother and I lived a block from each other in DC for two years in the '80s. He's someone I didn't love enough to suit him, and though we'd been close for a season, we drifted apart. I would so love to go back and fix that. He died before the internet existed in my life, unfortunately.

I don't know if that's what you call it or not, r521. I go to bed fairly early, last night a little before ten, and then I wake up a few hours later. I'm retired, so I don't have to get up in the morning to do anything in particular most days, and I enjoy being up when there's less noise in the world. So why rush back to sleep?

However, there are nights when I wake up around this time and I can't get back to sleep. Overall, I believe it may be related to the arsenal of pills I take (four for BP, one for diabetes, others), but I don't know this for sure. I've switched from coffee to decaf, so I'm comfortable making a cup when I wake up this early. Generally, I go back to bed around 5:30.

I retired recently and have been waking up very early ever since. I never wanted to stay in bed more than I did on days when I knew I had to get up and get ready for work. Suddenly, staying in bed isn't all that appealing. I keep my Kindle at my bedside and, when I wake up early, start to read whatever book I'm currently reading. That usually causes me to fall asleep again.

And then yesterday when I read my after-visit summary, I noticed his name at the bottom. So I googled him, and don't you know, he's got all these huggy closeup pics with some girl, whom I take to be his partner, at least. A girl. I'm sure my BP went up ten points owing to the utter shock of it.

I was REALLY in the mood for soup today. It's turned chilly again.

That failure I made last week is still sitting in the fridge.

I made the Linda McCartney vegetable soup - but I was more relaxed this time. I didn't have all the ingredients, so I did some substituting.

Also, at the end, she says you can add a tin of tomatoes, which I've never done before, so I threw caution to the wind.

And BOY! YUUUUGE success!

PLUS hand grated parmesan cheese (I bought ready grated for years - not nearly as nice).

So, I'm very happy. Success with a soup makes me as happy as flop soups make me miserable.

I think her vegetable soup is the best basis for any vegetable soup I've ever made.

Also, I had fresh rosemary from the garden and fresh thyme growing on my windowsill...which I'm sure was a big help.

I don't use anything in the cabbage-cruciferous-broccoli-cauliflower family. I just don't like them.

Generally, when I make a soup, I start with the soffrito base of onions, carrots, and celery. I did this just last night, in fact, to make lentil soup. In this case, I also used garlic, which I did not add until the first three had been sauteed until softened. Don't want to burn garlic.

I generally use bay leaf, but I was out. And a Parmigiano-Reggiano rind, but I didn't have one last night. I use a lot of salt. More than most people, I think. Salt makes all the difference.

Lentil soup:

For each pound of lentils, I dice two large stalks of celery, two large carrots, and one large onion. Plus, I chop two or three cloves of garlic into a paste. I get everything prepped before I start to cook. I dice my onion last because to avoid tears as long as possible.

Also, I use bay leaf and, if I have one, the rind from a wedge of Parmigiano-Reggiano (you can buy these separately here if you don't have any in your fridge; don't remove it from your current wedge). The P-R makes all the difference. I like a little thyme in this, too.

Rinse your pound of lentils in a colander, a strainer, whatever you use. I leave them in water until I'm ready to put them in the soup.

Soften your soffrito. Start with the celery. It takes longest to cook. Give it ten minutes, then add your carrots and onion. Add bay and thyme. Cook for ten more minutes, then add 8 cups of water and your P-R rind. Let it come to a boil, then simmer for 20 minutes.

Add your rinsed lentils and cook until they are soft enough for you. I generally cook them for 30 minutes. Correct for salt and pepper.

These times are approximates. Vegetables and lentils will soften at different rates at different times. After you've made your first batch, you'll have an idea of whether things need more cooking time or less. Your stovetop may be more powerful than mine. Variables, variables, variables.

Let me know if you try it and how it works.

I usually top it with sour cream or grated Parmigiano-Reggiano. Or just some olive oil.

r545 Soffritto is how you start your flavor base, by cooking onions, carrots, and celery together. The first time I ever heard of it was when I made Bolognese. Marcella Hazan also has a meatless tomato sauce with a soffritto base. I use it for any kind of soup other than cream soup (I tend to cook Italian). It's indispensable for chicken noodle soup, for example. Or making osso buco (though I haven't made that in decades).

Okay, r550. That is not Bolognese.

Here's something that's very close to Marcella Hazan's recipe. The only differences are that she starts by cooking the onions separately for a while before adding the carrots and celery; she does not use cayenne; she does not add much water in the beginning. I don't think any of these is a bad idea, though. I almost always end up adding water towards the end. Cayenne? Up to you. It cooks so long, I think adding carrots, celery, and onions simultaneously works just fine.

Anyway, this is Bolognese.

None of these things goes in Bolognese: mushrooms, soy sauce, Lea & Perrins, Mushroom Ketchup, Bay leaf, or grated cheddar. You can use them to make a sauce for pasta—it actually sounds pretty good—but it's not Bolognese.

I didn't post this, but hummingbird nectar is a mixture of sugar and water that people make and put into feeders (usually near windows) to attract hummingbirds. My sister does this, and I have seen many hummingbirds at her house. The poster was merely saying he had mixed up some hummingbird nectar for the first time this spring.

I went crazy cooking yesterday.

I saw an Apple Crumble recipe online and thought I HAD to try it out. Well, the crumble aspect was good and I achieved a nice crunch following his technique. But he also suggested caramelising the apples, which seemed like fun, but it's WAY TOO sugary as a whole. So I'll just do his crumble and use just a teaspoon of sugar with the apples in future.

I also made a tomato soup, just following my instincts this time and it came out pretty well. Bit thin. It needs croutons.

And as I was on a roll I attempted bread making. The yeast managed to rise and the bread seemed to rise in the oven and the bread tasted really nice but it was way too...um..hadn't risen enough, ABOUT AN INCH HIGH...so that's no good. I think I know where I went wrong, so I'll have another go this week

I love making croutons. I use the outside of a good, crusty loaf of bread, usually Italian, to eat with a soft cheese, such as St. Andre. I save the inside to turn into croutons the next day.

I tear the bread into bite-sized pieces, toss them in salt and olive oil, then put them on a sheet tray that goes into the oven at 400 for 5-7 minutes, longer if needed. Keep checking. Do not let them burn.

Got terribly sick on Friday - I think maybe the flu, even though I had a jab. Almost went to the hospital on Friday night because I couldn't breathe. I'm feeling better and I can breathe now, but still as weak as a kitten. Managed to eat an English muffin with a bit of Jarlsberg melted on.

The flu vaccine only protects you from the nastiest strain going around, it doesn’t protect you from all of them. So it’s possible you caught a strain you weren’t vaccinated against. However you’ve inspired me to go get the vaccine, if there’s a strain of the flu this year worse than what you had, and you seemed like you were in the wars, I really don’t want it it. Get better soon.

Does anyone else who takes blood pressure drugs have vision problems? It's hard for me to focus on my computer screen for about the first half-hour, and can't see street signs as well as I can when I'm not on these things.

do ya get headache too? sounds like increased intracranial pressure and is dangerous. I got it from another pills side effect. had to stop. Returned to normal within few days after

If I were you I'd start a thread about this - there are only five people here at the best of times, whereas a thread about blood pressure pills would expose you to a much larger section of the DL community - you could therefore probably banter all day about blood pressure pills and its side effects.

Just a suggestion.

R575, I get headaches from lots of things, but I haven't noticed a worsening since taking these pills. If anything, I believe I've had fewer headaches. Friday was the first bad one in a long time.

My first blood pressure is 137/88, excellent for me. I do not have a headache. I'm wondering if something I eat makes me itch. Like dairy, maybe. I eat a lot of sour cream compared to the rest of the world.

It’s 5 am and I’ve been up for hours. Reached the point of throw in the towel, get up and make coffee, stagger through the day. It’s because I ate a lot of ice cream last evening. Eating poorly gives me tinnitus and disrupts my sleep, now that I’m oldish.

I have tinnitus, too. I've grown so used to it, it no longer keeps me awake at night. I keep the radio on all night long (classical music). Maybe your version is louder than mine. Some drugs exacerbate it (gabapentin, too much ibuprofen), but what excites it most are white foods: flour, sugar, pasta, and worst of all, rice. I can pretty much live with it if I don't eat too much of any of those things, but I try not to eat rice at all.
