I would like to take a solo vacation but would prefer not want to be surrounded by kids and families. Urban hotels seem to fit the bill, but honestly I would like something more quiet and resort-like.... which almost inevitably means kids. I'm trying to stay within the USA just to cut down on travel time and expense - but I may be open to going elsewhere. I really liked Montreal a few years ago (had to go for work) but it's freezing there now & not the best option probably. I was there for a conference which used up 3-4 hotels so naturally there weren't many kids / families. I really just want to relax. I don't need to have access to museums and cultural monuments.

I would say travel in May or late September, when the kids are off summer break?

Palm Springs, La Jolla or Sarasota could all be euphemistically termed “mature” and are perfectly nice hot weather destinations. Maybe Charleston?

How are eco-tourism destinations for child infestations? Do people take kids there?

I take it Disneyland is out of the question then.
