First you make two hash browns. Place a frying pan on the stove, medium high heat and add a somewhat generous amount of olive oil into the pan. While the pan is warming, grate one whole potato (don't peal it). Then divide the grated potato into two halves. Slowly drop each half of grated potato in the pan and spread out into a thin layer. Add salt and pepper to taste. When each hash brown gets brown around the edges, flip over and continue to cook the other side. When done, put on a warm plate.
Now for the eggs. Lower the temperature of the pan to medium low. Break each egg into the pan. Add salt and pepper to taste. Then add a 1/4 cup of water to the pan and immediately place a cover over the pan. The steam of the water will cook the eggs. Cook eggs to your pleasure. I like mine medium, not runny. No need to flip over the eggs. The steam will cook the yokes.
Take each egg from the pan and place on top of each has brown. I like to break open each egg and have the yoke run over the hash brown. Enjoy!

Southern poached eggs/soul food. I've been meaning to try this, but I never have cooked greens on hand when I think to do it.
Cut a piece cornbread in a round shape.
Heat potlikker and poach an egg in it.
Pour some of the potlikker on top of the cornbread. Place the poached egg on the cornbread and cover with potlikker and some of the cooked collards. Season with your favorite hot sauce.

1 small sausage or slice of bacon, fried in a cast iron skillet. When the meat is mostly cooked through, add a big quantity of chopped fresh spinach. It will cook down enormously. When the spinach is cooked down, add two eggs and scramble everything together.
Add a splash of hot sauce and accessorize with a cup of hot coffee.

I just made a yummy scramble! I sautéed some onions, broccoli, and some leftover chicken shawarma in some garlic butter. Then I scrambled two eggs and poured them over that mixture. Then I sprinkled some fresh Parmesan cheese on top then cooked slowly. It was awesome!

Oeuf cocotte To cook them put the white of the egg with one dessert spoon of light cream in a ramekin add grated cheese or ham, bacon.. And put it in the oven in a bain marie. When the white is cooked, put the yolk in the ramekin then back in the oven for 5minutes. Add pepper and or salt (be careful if there is already cheese or ham in it).

For poached eggs, here's a neat trick: Strain the eggs before putting them in the water. Removes some of the more watery parts of the egg white, so you get less of the feathery, useless parts that separate from the egg.

I make a mean egg salad sandwich. Even fried egg sandwich is good. So easy when I am too tired to cook much to just make scrambled eggs . Steak and eggs is one of my favorite meals. My problem is I need to limit my weekly intake.

When I was a child my mother cooked my eggs runny because she thought it was healthy. I don't remember ever getting sick from undercooked eggs. As an adult I prefer them scrambled.

Instructions for perfect "over easy" eggs. Put butter in pan, heat to medium. When butter is mostly melted, roll it around in the pan to cover all the bottom surface. Crack your eggs into the pan. Cook for about a minute or so, until whites are cooking well and have turned white. Pour exactly one tablespoon of water into the pan, and cover tightly. Cook for about one more minute. The eggs will get that little bit of film over them, and the whites will be cooked firm. but the yoke will remain soft. I don't do it exactly the same way as these linked instructions, but close enough for government work:

r65 Eggs are considered the most perfect protein source. The amino acids in eggs are in perfect proportion for digestion. When the body tears apart the food, all of the protein in the egg can be used by the body for the building of new cells. That is not true for any other protein source, including meat and fish. It is quite likely that our primate ancestors, who were primarily vegetarian, did consume eggs as a protein source. (Easy to find, no need to hunt or put oneself at risk). That being said, we need many vitamins and minerals that other foods provide,especially vegetables, never mind fiber, so eggs would never do as a single source food.

Answer to OP: On top of a wiener schnitzel, to make schnitzel Holstein. (I use chicken, not veal, so I guess it's really chicken schnitzel Holstein.) Otherwise, scrambled, but I really prefer over easy. It's just that I always break the damn yolks.
