What in the world is this green lasagna?

It's a Marcella Hazan lasagna bolognese recipe. She adds spinach directly into the lasagna noodles.

Anybody tried it? It's laborious, but I'm intrigued.

I’m sure it’s excellent. Bechamel sauce plus bolognese is delicious, though rich. Probably one of those dishes that tastes much better than it tastes.

I've made it several times, It does take an immense amount of time but is quite good. The spinach definitely adds an a nice element.

Spinach is tricky. I don't mind it fresh in a spinach salad or cooked perfectly (using fresh spinach to begin with), but there are few things worse than brown, slimy, soggy, "fuzzy" textured, over-cooked spinach. Why ruin a great lasagna? To do it right, it takes TIME anyway (I always prep at least 2 and then throw one in the freezer for a later dinner party). I also make a bechamel and bolognese sauce and layer both into the dish. Plenty of fresh Mozzarella and good Parmigiano-Reggiano and tons of fresh basil scissored between layers also. The spinach is better on the side as a salad if you ask me. Plus, I was never eat a re-heated spinach lasagna the day after - gross...

That is such an unfortunate color for lasagna...I mean? SHIT. There are ways to add spinach to this dish -and still have it be delicious-but not look so tragic.

Lasagna bolognese is fucking delicious. I’d never go through the trouble of making the pasta from scratch, but everything else is worth it to me.

It seems to me that she didn’t top the top layer with an adequate, final layer of cheese to give it that crusted, baked cheese topping, which is IMO the best part of the dish. Also, this web post is from 2008. I am sure someone else can make this dish now, photograph it, and make it look prettier.

She uses standard pasta. The spinach is there because some AmeriCanadian thinks all lasagne is lasagne florentine.

It should have a sauce thats half bolognese half salsa di balsamella, reg pasta, mozz chees, parm and butter to top.

I think it's better to just add spinach to the sauce. Spinach mixed into the pasta dough doesn't taste good in my opinion. It ruins the flavor of the pasta.

R36, I tend to think green pasta is more for aesthetics than taste.. yes there are some green pastas which can look striking (see below). Any taste it would have would be rather subtle.

Sort of how like squid ink pasta is more for looks, IMO. Although some people with a more discerning palate might tell you it tastes iron-y with “notes from the sea.”

R41, ultimately I prefer my mother's lasagna recipe. I made it just for the novelty of it, for a group of relatives, who agreed that it was very tasty but the color was a bit offputting. My elementary school nephew and niece were into the green color... lol.

R46, the OP's is a particularly unflattering photo of this dish. Mine was not photogenic, but it didn't look THAT bad. The recipe was solid in terms of taste though - it's a dish you might serve under very dim candlelight...
