So Many great dinners here...R3 & R4 sound delicious... I made BBQ chicken, with a Five-Spice homemade sauce, and a dry rub. Rocket salad and Apple Strudel for dessert. I wanted to make a lemon rice or baked beans, or another side, but petered out. I've been recovering from a funk, and haven't been cooking, so it was nice to make an effort, but still wish I had more energy.

You cracked me up with your post R29! I'm not super keen on it raw, but it can be cooked and treated like Spinach. Kale can make an excellent Florentine, great in soups and stews, and is delicious creamed like spinach with onion or shallot and Romana or Parmigiano.

Kale is delicious prepared correctly. Steamed kale is not "correctly". All cabbage varieties (of which kale is one) do best with the same treatment (green cabbage, collards, napa cabbage, bok choy, turnip greens, etc) . Heat oil (tbs or so) in pan on high, saute the leaves stirring with a tong until there is some oil coating all the leaves, with a clove of garlic or some other aromatic (onion would do in a pinch), then pour in about a cup of rich flavored chicken broth, and cover tightly, watching to make sure that liquid doesn't run dry and the leaves don't burn. In about 10 minutes, you'll have succulent, flavorful leaves that are brightly colored, with just a tiny bit of tooth bite (not crunchy or they are not cooked enough to be edible). If you need a little more flavor at this point, sprinkle with a little coarse salt. Cooked incorrectly, kale is inedible, as several posters have mentioned.

As I said, the teenager was flexing some new kitchen skills, so it was more about supporting her efforts than whether it was a five-star gourmet feat or not. But I suppose DL is not the place for warm fuzzy sentiment. I shouldn't have thrown that particular meal on down onto this particular thread.

I like kale pesto. Substitute kale for basil. I also use nutritional yeast instead of cheese. Toss the pesto, whole wheat pasta and black soybeans. Serve cold. It's tasty.

Leftover prime rib from a restaurant that I was taken to. The most awful, tough, impossible prime rib. I ordered it medium rare and thought maybe it needed to be cooked more, although usually that makes beef even tougher but I felt bad leaving it over after just a couple of bites that I had to spit into my napkin. I noticed the other person at the table who ordered it too, also medium rare was bringing his napkin to his lips with every bite. My guess spitting it out as well. We should have said something. I claimed an upset stomach from lunch and assured the host I'd eat it the next day.
This was a supposedly good restaurant. Others ordered lobster. I should have gone with the lobster but it's so messy to eat in public.
Anyway, I doubt if this beef was even choice. It must have come from someplace where they usually make dog food. If I had a dog I would have been afraid to give it to the dog that he might choke. I guess the lesson learned is that if meat starts off inedible you can't take it home and save it. I'm still glad I did so my friend wouldn't have felt bad that he wasted money on the two prime rib dinners.
What a freakin' waste of money, not my money but still.
Long story short tonight I ended up with a homemade egg sandwich for dinner and some grapes.

Shepheard's pie is the food of the G-ds R77. So glad you used lamb. After moving to this confusing country, I have learnt Americans usually make theirs with beef... which is really a Cottage pie where I'm from. IMHO the secrets to an ethereal pie is lots of leeks and Thyme. I purée a bit of the leeks with my mash for the top. It browns quite nicely due to the high sugar content in the leeks. Very near impossible to find in the States, but the Coleman's sachet of seasoning makes for a really classic Shepherd's pie flavour, especially if you do not have good fresh Thyme on hand.

I ate Hydnum repandum, a hedgehog mushroom that a friend picked a few days ago. Enormous mushroom, very tasty - I'm afraid of wild mushrooms, but I knew this Chinese lady had consumed several since she picked them and she was still alive. I was shopping all day. I developed a craving for frozen fish and French fries with miscellaneous industrial sauces - tartar, ketchup, curry, sriracha. It was delicious and easy peasy. I will never finish these containers of sauce, however.

Well I like sweet things, R138, so sometimes I do ketchup, a little brown sugar, some vinegar. Sometimes I do an herby meatloaf, a bit of tang to it, so I like a brush of some maple syrup. Another topping is simple Worcestershire, a bit of honey. Always use a light hand. Never overpower the meat.

Deli counter turkey and Swiss with mayo. I'm trying to decide if I want it on a plate or in a sandwich. I'm trying to watch my sodium and two slices of bread on average is about 600 sodium before anything is even added to it.

Blackbean salsa turkey cheese burger with 2 slices of monterey jack, mayo, and catsup on a toasted onion roll. I have to eat it with a knife and fork. It is so good. I don't need any sides. Just a tall glass of iced tea or sometimes an A&W Rootbeer.

r147, have you tried Ezekiel bread? It's in the frozen food section of the supermarket. No sodium, and has more protein and fiber than most other bread. It's pretty crumbly unless you toast it. You should also be getting low-sodium or, even better, no salt added turkey at the deli. Swiss is probably the lowest sodium cheese.

Thanks R149. No I haven't tried Ezekiel bread. Thank you for telling me about it. I'll look for it when I shop on Saturday. You're right about the turkey. I usually get Boar's Head Oven Gold. It has about 450 sodium per 2 oz. It's not really low sodium. I did try a deli salt free sliced chicken and I have to say it was horrid. I had to add so much mustard just to make it edible and that mustard drove up the sodium. I can cut a lot of things out of my diet but sodium is really hard. Nothing tastes good without salt, at least to me. But I will keep trying. I do buy mostly Swiss. Boar's Head has the gold label imported Swiss that is 60 sodium in 1 oz and it does taste good, especially melted. I do crave really salty cheddar or provolone but I don't buy it. I'm trying to be good. I fail a lot but I keep trying.

Salmon, capers, salad and cream cheese wraps. I got the salad straight from the garden (parsley, perpetual spinach, mint, thai mint, coriander, lemon basil, roquet, perpetual basil and nasturtium flowers). After a few years of gardening I've got it down pat...cherry tomatoes, cucumbers and lots of herby salad greens. That way I can keep the pests under controle and get a lot of decent meals out of it.

R157, it came out well! Not as good as my mom or top restaurant quality but as good as I’ve ever made it. I’ve attempted it about five times before and the potato to flour ratio was off, resulting in a slight gumminess.
