R76, my cherry pie won 1st place in an Amish baking contest. This is how I make the filling. It's pretty tart with an intense cherry flavor.

1 lb frozen montmorency or similar cherries (fresh/pitted if you can get them) 1/2 cup sugar 1 oz tart cherry juice concentrate couple dashes salt 3 Tbsp quick-cooking tapioca

crust can be a mix of lard and butter for sweet. all lard for savory is my preference. a spoonful of vinegar in the water helps tenderize the dough and keep it from browning too quickly. i'm not a fan of hydrogenated shortening although i've used palm oil shortening successfully.

1/3 each of lard, butter and shortening makes the best crust. If you need it right.

Anyone who has a favorite pie is a limited human being.

See R84 for an example. And you can bet she's never actually baked one, or made her own graham crackers for the crust, or squeezed the limes. There's a lesson there for such specific tastes.

^^I stand happily corrected. There is existing tape of THE KARATE KID that shows the blueberry scene, albeit grainy rehearsal footage (found as part of an entire rehearsal shoot of the movie on John Advilsen's YT channel, highly-recommended viewing for movie fans).

It's a great little scene but obviously unnecessary to the final cut. The actors forgo a real blueberry pie and just use a stack of binders as a stand-in prop, but you get the idea. Daniel gets so enraged he just goes to tackle Johnny Lawrence (who is twice his size) without hesitation. In this rehearsal clip Macchio & Zabka are wearing different and fewer clothes than the still I posted, guess it was a long hot day of shooting.

There's a new pie shop opened about a mile from me. Stopped in last week for some. Sorta disappointing. Very skillful pie maker, but her ingredient choices were peculiar. The owner uses a butter-flavored shortening that has an artificial taste that I recognize as a butter/dairy "natural" (it should be said, synthesized from natural chemicals) flavoring that is popping up in several foodstuffs lately. She should go with an unflavored shortening. I got cherry pie, and she made it with Bing cherries - who the hell makes cherry pie with Bing cherries?

R141: Whenever someone claims some dish originated in the South it's not difficult to find otherwise. The Amish make them in Ohio. Hostess and various other commercial bakeries have been making bastardized versions for decades. The Cornish made a savory version which are well known in the mining regions of norther Michigan. And this is before I consulted with Google.

R140, Bing cherries are much more bland than "pie cherries" such as Montmorency. They lack tartness and don't have that intense cherry flavor. They're better for eating fresh. Bings are much easier to come by here than pie cherries; but for a pie specialty bakery, it would not be difficult to buy frozen Michigan or Pacific Northwest cherries.

They have odd limited distribution, R146. You can get them in the midwest and the mid-south and in the Great Lakes area. I never see them in the southwest or west. They (or similar varieties) are available in jars in international markets that have German, central and eastern european food.

All the pies listed are good OP if they are well made, grocery store pies are barely adequate at best and believe it or not I found a cherry pie made from dark, sweet cherries--horrible. It's hard to find fresh tart red cherries in stores partly because their shelf life is short. It is also impossible to find good black raspberries anywhere, even in areas where they are grown. And many people who don't know any better mistakenly think black raspberries are the same as blackberries, which also make a good pie. My grandmother used to make huckleberry pie which I think is similar to blueberries but not quite the same. Lemon sponge pie is also good if made well--another Amish thing. The Amish are also famous for raisin pie.

Montmorency cherries used to be more popular--decades ago. They have limited distribution because they're grown in the Great Lakes region and they're not widely popular enough to be grown some place like Chile to create a bigger supply. It's kindof like not finding Michigan blueberries in season unless youre close to Migigan. Instead you get crap from eleswhere.

R152, I used to buy some generic brand, I think it was called "Best Value," in Oklahoma. They sold frozen Montmorency cherries that were grown in Poland. I wonder if they're still available? I can't find the brand online, maybe because the name is so generic it messes with search engines.

It would be easier to list the pies I don't like!

I used to hate Sweet Potato pie, but a friend's mother made one of the best I ever had - creamy but light.

Pecan pie also used to leave me cold - too rich,too sugary - but I have had some wonderful ones.

Can't really do the sugar pie, which I believe is also called shoofly pie in the south; and peanut butter pie is also something I avoid. Just too much sweetness. But all the classic fruit and citrus pies are wonderful.

Love savory pies too - veal and leek, steak and kidney, quiches...

My grandmother used to serve a mint chocolate chip ice cream pie in a crust made of Famous Chocolate Wafers with strawberry compote spooned over each slice. Perhaps not a true pie per se but delicious and very impressive to see.

After making too many pie crusts to count, I've come to the conclusion that making your own isn't worth the trouble. The Wholly Wholesome frozen variety tastes almost as good and you don't have to waste an hour preparing it. It cuts your pie-making prep time in half.

Good to know, R160. I've always been terrible at rolling out pie crust, and now, my kitchen is too small. I've been making mainly crustless quiches, pie-wise, but it's not quite the same. I'll try Wholly Wholesome.

Recipe:

Crust- Use recipe of your choice

Filling:

1 cup granulated sugar

1 cup confectioners sugar

1 egg

1/4 cup brown sugar

4 squares of a very good ( Valrohna or Guittard) Baking Chocolate

3 pounds of Moosecock

Bake at 325 degrees until gold and bubbly

It is a great recipe if you live in Maine. My gram and I start moose hunting and it takes us a good 2-3 months to hunt down the moose.

This is Mee-Maws Maine Moosecock Pie.

Big Lots occasionally stocks cherry and berry pie filling made in Eastern Europe. Not that sweet and almost no additives. They also don't use HFC or artificial sugar. A spoonful makes morning oatmeal edible.
