The Don and Betty characters are getting bad lighting this season. It goes along with their story lines. Actually, it began season 5 for Betty, season 4 for Don. Check it out--they get lit from low angles.
Jon Hamm has always looked older than his age. Here's what he said about it:

The one scene where he looked good in the "To Have and To Hold" episode was when he stayed in bed as Megan was leaving the apartment for her soap opera filming.
Mad Men definitely pulls its characters down a notch or two in appearance according to some storyline or theme.

r20, you're reading too much into it. The lighting and makeup probably make him look better. You realize that die-hard viewers who look for metaphor in every line reading and visual element aren't the show's only audience. It also appeals to fraus on a purely soap opera level who want to see their movie star handsome leading man looking as handsome as possible, and the produers know that. And btw, soaps are taped, not filmed.
