White fish many bones, what would you make?

Assuming I can eat tonight...

I've cooked a few filets of some mild white fish a friend caught. Bony as hell so in order to get the bones I crumbled the fish as I went.

I now have a lovely container of cooked fish bits.

What should I make with them?

Just use it instead of crabmeat in your favorite crabcake recipe, or instead of clams in your favorite chowder recipe, or whatever seafood recipe you like.

Since it's the dead of winter, make chowder. Make a lovely creamy soup base, with potatoes, onions, carrots, celery, whatever. Add the fish at the last minute, to keep it from dissolving into the soup.

Mmmmm, nice hot chowder for dinner, in the dead of winter.
