Having lived in Maryland I assumed you were talking about the blue crab on the east coast.Lots of work to process and the lump is usually sold pasteurized commercially. The reason it is expensive is because of the intense competition for the lump meat. Many restaurants in Maryland and Virginia pay to have the crab flown in on private aircraft when the supply is short because it is their staple. I used to go crabbing all the time, easy to catch. I think the same crab species can be found in the gulf of Mexico Others have stated most crab cakes you buy most places is crap, not real lump crab meat

All the easy to get crab has been over fished. To get crabs big enough to eat, ships have to go into the dangerous arctic waters now.

It's crab season on the North Coast of California. We get fresh caught crab for the holidays. The fisherman go out day and night to set the crab pots, good weather and bad. I've seen them go out in 16-foot seas.

Everything but canned tuna seems so expensive now days. I found some chicken of the sea crab meat for less than $3 dollars a can the other day and it was alright. Then I saw some white crab meat for $7 dollars a can, for just six ounces! That's too much for me cause I'm poor, have a laugh richy rich. Maybe I'll try shrimp cakes:(
