Why is room temperature cheesecake better than warm cheesecake?

Science. Our extensive tests with severed beef tongues long ago determined that the flavor ingredients which characterize cheesecake flow better when warm. They flow into the taste buds, which electrically convey a heavenly taste sensation directly to your brain!

Perception of sweetness is heavily influenced by temperature. If you make ice-cream, typically the recipe will involve making a custard which is incredibly sweet; unpleasantly sweet even. When the custard is frozen however, the low temperature dulls the sweetness into something much more palatable.

Also, cheescake gets softer as it gets warmer, if you warm it up it's practically liquid. Chill it and it's dense and firm.

In better homes, cheesecake is ALWAYS served slightly chilled for better flavor and texture.

If I buy a frozen cheezecake, I always eat a few frozen slices. It's like the best cheezecake ice cream. I don't like the texture of it when it is at room temperature. It is too slimy and soft. I think it is better chilled.
