OP, if you're serious, there are several reasons for the large number of human disappearances that occur each year.
About 900,000 missing person cases are reported annually in the United States. About 500,000 are never found. And the actual number of disappearances is higher, because it doesn't include people who are already living out of the network, such as the homeless (who are heavily targeted).
A fairly small number - about 25,000 - are taken by serial killers. The active and successful serial killers - and the surprisingly successful thrill/hunt murder organizations out there - are rather efficient, more so than realized. The better psychopaths each take from 4 to 100 per year. Some of the organizations will go through 5 to 40 per month, either through hunts or torture sessions for the group. These include a few - not many - illicit gourmet groups committed to enjoying the potentials of human meat. These are not the crazed cannibals from movies - they are connoisseurs in a very old, secret tradition. A lot of children go to this purpose - tender and fresh, apparently, compared to man mutton.
A much smaller number are taken by professional criminals, for revenge, warning, payment. This accounts for only 7,500 or so, but watch for huge increases if the Mexican-style activity spreads north.
About 30% of the total drop out of sight on their own. They take other identities, run away, leave it all behind. This group is having a harder time, because of the extensive expansion of surveillance and databasing. Many are now found eventually who formerly would have stayed unlocated.

This is more difficult, because the healthy are preferred among the higher-end organizations, and the disappearance of healthy people tends to get noticed, because they usually have families and friends. However, the low-end, international organ-sale groups will use just about anyone, and they do sweeps from city to city, careful to avoid patterning identification.
And most of the rest are collected for various research purposes. Many are shipped out of the country - it would threaten the system if anything ever was discovered that started to pull the thread in the fabric of the system. But some domestic facilities exist, under deep cover. None of this is official government business. But it is huge, with about a billion a year in funding from various private and international sources. Life-extension, elite medical research, weapons testing with both munitions and bio/chem, DNA/genetic work, human-animal crossbreeding are among the primary foci.
And in the last category there also are hints - I'm not privy to details and don't dare ask the right people about it - that some partnership with "unidentified colleagues" is involved. There is talk of a treaty that includes collection of humans for research purposes, in exchange for the appearance of continued autonomy and independence.

This thread should make you think a little harder about what the real effect is. There will be more and more of these extreme stories because there are more broken human beings. Let's say there were 10,000 when the world had 3 billion people, and there are 25,000 now. Instead of an awful incident being revealed, say, once a week, now it happens every couple of days. The effect of a single "mistake" of one human being is magnified tremendously.

The question remains whether they guy knows he is a walking organ donor or just thinks he lives a life of luxury?

In high school we had one of those scared straight assemblies, with an officer talking to us about what happens to teenage runaways. He said most end up in prostitution and die, from murder, abuse and drug addiction. He said many are sold as sex slaves and kept in captivity. Others end up with film careers - illegal pornography and snuf films. He talked about one family's years long search to find their daughter only to find out she was killed in a snuff film. I remember he said the things he's seen still keep him awake at night and the only reason he can do his job is to keep kids safe. This was in an upper middle class, suburban white kids - didn't think we were a likely demographic, but who knows. Upper middle class kids can be just as vulnerable. Even more so now, since prescription pills and heroin are so easily available, so many kids are using it and ruining their lives.
Sometimes a person can be, well, disgusted with where the path in life has led to. That person longs for a change, the sort of change that can only happen if they just pick up and GO, no strings attached. So, they do just that, pick up and go. Sometimes it is the only way to change things.
Before computers,search engines and 9/11, it used to be much easier to create a new identity. Not so today.
