R8 - actually, I prefer "fried" tofu with a resistant (I would say "crunchy" exactly) texture, rather than mushy bricks. As far as beef goes, I generally order medium well, although for thinner cuts, medium works better. Anything less is far too ... chewy for me!
Medium rare is considered to be the best way to serve steak and lamb. Other meats such as chicken and pork should be cooked through.
