A few years ago there was a quiz going around the internet regarding religion(s) in general and it was claimed that atheists and agnostics were much more likely to answer correctly. It was something like 15 questions. I, an agnostic on my best day, missed 1 of 15. Most American Christians can't even begin to get half of the questions about Judeo-Christianity right, much less those about other religions.

- On NBC Nightly News last night, Ann Curry interviewed the monsignor from the local Catholic church. He told her about relatives of the victims coming into his church experiencing the full range of emotions. He choked up a few times while talking and expressed his horror and disbelief at the event, and his inability to comprehend it. Not once did he say that the victims were in heaven or some such similar platitude. Had to give him props for that.

The popular usage of the word "angels" has broadened, beyond the "separate beings" definition. I'm sure most people aren't thinking about some technical meaning and are rather using the term as its often used.
Does it really matter? It's just formulaic things people say to make themselves feel better. Yeah, it may seem stupid to some, but what's the harm if it makes them feel better?

The answer is that we all grieve because we all--religious or not--intuitively understand the finality of death. Talk of angels, the childish need to feel that you can "live forever," souls that transcend death, etc., is all just a coping mechanism.
