The best local pie place calls it "Dutch apple" pie. They also make a "French apple" with a sort of buttery bread crumb mixture on top.

- I agree about the vodka, R59. Cider vinegar works well too -- both inhibit gluten production, for a more tender crust that's very easy to work with.
- Why would I ever make my own crust, someone else makes it and I buy it at the store. It's such a pain to make crust.
- R62, when you have time & are in the mood to bake, making your own pie crust can be very satisfying. You can mix it up when convenient, freeze discs wrapped in Saran, then thaw & roll out when you need them. And using vodka or vinegar does make the dough really easy to handle, so the process is much less difficult.
A woven lattice top crust is fun to make & it shows off the beautiful fruit.
- I'd marry the man who could make a decent raspberry pie. Not too sweet, and not too runny, and served warm with ice cream.
