The best local pie place calls it "Dutch apple" pie. They also make a "French apple" with a sort of buttery bread crumb mixture on top.

I'm with the people here who don't especially care for apple pie. Mainly because it's so seldom prepared well, despite the many recipes and types.

I agree about the vodka, R59. Cider vinegar works well too -- both inhibit gluten production, for a more tender crust that's very easy to work with.
Why would I ever make my own crust, someone else makes it and I buy it at the store. It's such a pain to make crust.
R62, when you have time & are in the mood to bake, making your own pie crust can be very satisfying. You can mix it up when convenient, freeze discs wrapped in Saran, then thaw & roll out when you need them. And using vodka or vinegar does make the dough really easy to handle, so the process is much less difficult.
A woven lattice top crust is fun to make & it shows off the beautiful fruit.
I'd marry the man who could make a decent raspberry pie. Not too sweet, and not too runny, and served warm with ice cream.
