I'm cooking alone this week because I've temporarily moved out of the apartment I share with my boyfriend. I need time to decompress.
I am used to cooking large, elaborate meals and could use suggestions on meals for one. I have made a large pot of chili as well as coffee-chipotle short ribs with celery-root puree, something I eat for comfort. However, I can't eat this all week. I plan to make a few from-scratch salad dressings and maybe some soup for my next-door neighbor, who's glad to have me back -- split pea, maybe. Something light, since my stomach is in a constant knot.
Any ideas regarding tasty solo meals? Thank you.

Definitely make the soup for your neighbor, & have some yourself with cornbread.
Soups in general are nourishing meals & easy to eat when you're not feeling well -- just have as much or as little as you want, with some kind of good bread. Making soup & baking bread are comforting activities in themselves.
I like cold soups in summer: vichyssoise, gazpacho, butternut squash, cucumber, etc.

This is the timeline. We went to the Cape and had a miserable time. I moved out for a bit (I kept my old apartment) when we got back. He did not "kick me out," we took a break from one another to sort through our feelings. I recognized that I was being overbearing, and he recognized that he was being unappreciative/insensitive.
Anyway, I have moved back in with him. I'm not sure why that's so hard to explain or understand. The one down side to moving back is that his kitchen is much less equipped than mine, which has a butler's pantry and an eat-in kitchen. However, I will make do!

In response to your original question, I keep humos, pita, peanut butter, whole grain bread and eggs for breakfast and the rest is frozen food or takeout. I also make a lot of soy lattes and protein drinks.
