Red Beans and Rice

I made my first ever batch and it's pretty good but it lacks that real Cajun flavor, despite the seasoning, and it won't cream up the way it's supposed to and maybe it's too smokey tasting from the sausage. I couldn't find Andouille so I used regular Chappell Hill sausage. Anyone ever successfully made this dish? Please give tips.
